My own theory is that once there were 2 primordial fruits: the fruit of Nika, and the fruit of the Devil. Nika allows its user to use every power he imagines (we see luffy creating objects, flying and so on) And the fruit of the devil maybe allows its user to just creat any power he imagines and giving it the form of the fruit asking in exchange the impossibility to never swim again (and in a sinking world is like asking to die), that’s why we have devil fruits. It’s like they are two faces of the same coin.

Of course, it's all speculation, but the idea that convinces me the most today is that they were all deceived, forcing Joyboy into a corner with very few allies. This led to the weakening of Nika's fruit and ultimately to his defeat.
