It's not really good cooking if its saving grace is the fact that it rides on the back of an ingredient that costs $90 per ounce. The way he prepared the rest of the dish looks like something pretty much anyone else can do, no innovative gastronomy, no multi-stage preparation techniques, nothing, it's literally just a lobster scrambled egg on top of potatoes topped with caviar. When you're going to drop a $1000 dollar price tag you'd be pretty damn certain the customer isn't looking for normalcy, otherwise there would be a large variety of other restaurants that can pull it off better for a very small fraction of the cost.

The markup on that is HUGE. Eggs and potatoes are very cheap, lobster these days is relatively inexpensive, and they didn't put enough over priced fish eggs on there to even make it $200 in ingredients, so the rest is essentially a conspicuous consumption tax (i.e. price gouging rich people).

the caviar can be bought for $250. aside from that, a dozen eggs cost like $3. a 5 lb bag of Yukon potatoes, maybe $7 (I'm guessing on the potatoes) and I can get 2 lobster tails for $10 at the local grocery store. so a grand total of $270 for ingredients is worth $1,000 in that restaurant. fuck that

It couldn't be more than twenty dollars. Maine Lobster is probably the most expensive ingredient in there, and it's not expensive at all anymore. You can get a whole, live lobster for less than $10.

Well, he's basically right about the engredients in a nutshell! The potatoes, chives, and eggs are all relatively cheap, the lobster and the fish eggs are the only thing of substancial cost, and as someone that does understand cooking, the price of this dish really is bullshit!
