Overall this channel is one of few that emphasises experience based advices rather than just instructing you on how many grams of flour to add and mix it. I learnt so much more than recipes from here.

Having a small bowl on the side to throw peels and such also makes cleaning easier!

Pro tip: you can make buttermilk by adding a tablespoon of lemon juice to 1 cup of milk. If you do this you will get a much more satisfying crunchy breaded chicken

Hey Ethan you should really do a video about frying oil, like the amount of oil you actually need to fry different things, how many times you can reuse fried oil and the change in flavour reused oil gives! Anyways great video!

@@TAPORZZ1 kinda late, but no not really. If you strain out foodstuff in your oil you can re-use your oil quite a bit, and you should only replace it once it starts to taste off. The reason fast food restaurants replace their oil frequently is because they literally fry hundreds of things a day, the averagr person on the other hand will only fry one thing a day at most on average. If you're worried about germs, you don't really need to, oil is very uncondusive for germs to grow in, and in fact may people throughout history have preserved food for months by simply just submerging it in oil, it actively prevents the growth of bacteria

This was so delicious! The second time I made it, I toasted the bun a bit on a nonstick pan (no butter or browning) and then placed the onions on top of the lettuce so that the juices and sauce wouldn’t soak into the bun. :)

I just made these in two attempts. Here are some pointers... First, they're awesome. But keep these things in mind... 1. I wouldn't drizzle the chicken milk into the flour mix. If you drizzle too much, it turns into a sticky dough almost immediately and you'll have to start that part all over. 2. If you're going to fry in a pan or deep pot, use a screen to catch the splatter. 3. I'd turn the heat to medium or medium-high after the oil reaches temp, otherwise the oil may get too hot during the frying part. This happened to me during my second cook with one chicken thigh. 4. Heat the oil and fry the chicken outside with the wok, pan, etc., on the grill (if your wok, pan, etc., are compatible with being used on a grill) because this *will* stink up your kitchen! 5. Finally, temperature check your chicken at 6 and 7 minutes. They'll go the last 10-20 degrees super fast! You don't want to overcook them. Again, these were delicious, so hopefully this helps!

Ethan, I really appreciate that you provided the exact gram measurements of the ingredients. Since I use a kitchen scale often it helps with knowing exactly how much to use so that we're not guessing too much as to where foods or ingredients get wasted and thrown away or not too little to where it receipe doesn't come out accurate.

Totally understand. I, too, can make a 20-minute, "easy" recipe take several hours to complete. Usually by the time I'm through cooking, I'm far too exhausted to eat.

Like many, I rarely have butter milk on hand because I don't use it enough. The fact that he used Milk and vinegar is very important. He glossed right over this point, but in fact adding vinegar to milk creates homemade buttermilk.

Me ans my wife tried this last night, took us 38min, but we did have to skin and bone the thighs. Room for improvement, but that's not the point, how good are they, the trlck with the milk and vinegar is amazing (difficult to get buttermilk in the U.K.) and the rub with starch, outstanding. Great video on all fronts. Thank you sir.

Make a habit of keeping a couple cans of evaporated milk in your pantry. I mix a half can of that with some lemon juice and whatever spice mix I'm using that day and marinate with that. When it comes time to coat it with breading, the thick milk mixture holds onto the breading beautifully. If you don't have a use for the second half of the can of milk, just pour it in a freezer bag and freeze it for next time.

Hi Ethan, personally speaking, a series of quick recipes, cheap with low amount of ingredients would be really interesting. It's a great way to get into cooking, for those just starting out. Plus, like you said in the video 90% of your cooking is in this style, and for most people the goal is closer to 100% of their cooking. Great work, really love your channel :).

It's so easy to make! In addition to making a quick brine, I often use the left over store bought pickle brine and add onions to the jar!!

I know most people don't have cheesecloth to strain their oil, but I've found that a clean dishcloth works immensely better that a paper towel or a paper napkin. 4:04

Tried the pickled onions. Turned out great, now I need to make some more since they already run out. Tried smash burgers. After many semi satisfactory tries with electric grill I bought a flat cast iron gril for gas stove just for this dish. After making it (and opening all windows in my apartment due to amounts of smoke) I could not believe how simple, quick and delicious these burgers are! Tried burger bun baking. Turned out more crispy than soft and fluffy mostly due to fact they were to be eaten in 12 hours. And were not stored in sealed plastic bags but paper one. This one convinced my to buy kitchen thermometer. Now I am tempted to try deep frying for the first time and this recipe looks like the winner in my eyes. I actually have chicken breast frozen so I might actually go and do it now. Ever since I discovered this channel I have been using the recipes from it regularly. As mentioned, be it buying thermometer, iron grill or wok, I am expanding my cooking horizons thanks to you Ethan. Is spelt flour available in US? If so, then I have a very nice recipe for spelt flour honey bread to showcase, perhaps some time in future 😊

I have a request for you, Ethan. Everytime I try to make banana bread, it turns out ultra dense, gummy and rubbery. I don't overmix in my opinion, just enough to incorporate thoroughly. I have tried multiple recipes but none produce a desired result. If you would be so kind as to break down each component and make an ultimate recipe (with explanations because I'm a food science geek), I'd be so grateful. Thanks!

You use the same Walmart peanut oil I do! Cornstarch is really key. Usually fast food chains use flour and cornstarch, but you got a great coating with cornstarch and milk! If you use two thin tenderloins, they can fry up in a minute or two. Chick-Fil-A uses them in their sandwich sometimes.

We just finished eating deep fried chicken according to your recipe and tips and it turned out great. Definitely it's gonna be a staple of our family cooking, especially that we don't have a good fried chicken joint where I live. All the best from Poland!

I tried this recipe, and since it was my first time frying and it took me like 4 hours, it was the best chikan samitch i've ever had!

Tried this recipe today and was blown away by how good and easy it is. The simple combination of spices for the flour/breading was a winner. Some of my comments are: 1.) The chicken itself was a little bland, but the breading kinda made up for it. 2.) I didn't get the crunch that you had, so envious! Will surely be trying this recipe again with some tweaks.😊

Pretty solid, I went nicer with Buttermilk and it turned out good. Love the focus on the cleanup, and discussing how to "keep on the move" by multitasking around the kitchen. Great channel that's not burdened by ads, sponsors, yet provides solid content with good research. Thanks man!

Made this for lunch today on a toasted brioche bun with thinly sliced yellow onion and pickles, topped with the same sauce you made. Sooooo good! Great way to use up boneless skinless chicken thighs. Love your videos Ethan 😁
