RECIPES AND INGREDIENTS:
2 eggplants
half a pepper
1 onion
1 cup tomato passata
2 cloves of garlic
1 tsp sugar
1/4 cup water
3 eggs
30 grams of mozzarella for pizza
1. Peel the aubergines (optional) and cut into cubes.
2. Fry the aubergines in a pan until golden brown, salt and pepper.
3. Remove the eggplant from the pan.
4. Cut the onion and pepper, fry in a pan, add tomato puree.
5. Add salt, 1 tsp sugar and chopped garlic.
6. Add 1/4 cup water and simmer for a few minutes.
7. Return eggplants, mix, form wells.
8. Crack 1 egg into each well.
9. Simmer under the lid for 5 minutes.
10. Sprinkle with cheese, melt cheese under the lid.
