Someone probably told you sour beer was too hard for beginner homebrewers, well they were wrong. I got four ways to make amazing sour beer with minimal effort. Plus a delicious Key Lime Pie Gose recipe at the end!

KEY LIME PIE GOSE RECIPE
Recipe for 5 gals (18.9L):
-6.6 gals (~25L) Water
______________________
~8 LBS [3.63 KG] of Grains
-62.5% Wheat
-25% Pilsner
-12.5% Munich I
- 1 Sleeve of Graham Crackers (I'm sure it adds some fermentables but I didn't calculate it)
______________________
Mash @ 152ºF (~67ºC) for about 45 mins
Chill to under 100ºF (~38ºC)
Pre-acidify with Lactic Acid to pH of 4.5
Pitch 16oz of Good Belly
Wait until pH has dropped to 3.5
______________________
Boil for 30 mins:
-0.25oz Motueka (~7g) @ 30min
-0.5oz Motueka (~14g) @ flameout
-8g Key Lime Zest @ flameout
-5g Kosher Salt @ flameout
______________________
-Kolsch Yeast or any German ale yeast
Ferment around 65ºF (~18ºC) for ~7 Days
______________________
-2oz Vanilla extract in keg (feel free to modify based on your taste but this was nice to me)

Original Gravity: 1.045
Final Gravity: 1.008
ABV: 4.7%
IBUs: ~6

sourpatch kids are way better. warheads are actually nasty af, you dont eat them for taste, but as a test of endurance

I was skeptical about the Lallemand Philly Sour yeast over more traditional souring methods, but it produces a very pleasant, easy-drinking sour. It has quickly become a favourite at our small, seasonal taproom.

I've personally found that kettle sours almost always have a strong DMS funk to them that is really distracting. Not a fan. I've used Philly Sour a few times and it has always turned out far cleaner than my kettle sour attempts, or brewery sour beers. Would highly recommend for sure. Thanks for the vid!

Just love all your videos, there an amazing resource for home brewing. Do you have any recipes for making beer with popcorn? I’ve seen a few recipes that equate popcorn to flaked maize. I just want a kettle corn/ carnal corn ale.

Sourpatch Kids for sure. I use goodbelly as well for a ton of recipes, but never a key lime pie! Might have to do that one next, looks delicious!

I wasn't thirsty, but now I am. Very amazing sour recipe Trent! I will have to try this one someday. Any recommendations to get some graham cracker flavor in there as well? Or do you not recommend the graham cracker profile with this beer?

You could try adding more graham crackers. Or some honey malt maybe? Definitely some ways to experiment with it for sure.

Love q good sour. I feel like I have almost come full circle when it comes to trying different beers. I hated on lagers for a long time but now I find myself drinking them more and more. Do you think you could recreate the original Newcastle recipe? The new recipe they have in the States is awful and it's a beer that used to bring back so many memories.

You can absolutely do it! Start with a partial mash, and try one of those souring yeasts. Makes it super easy. You already got the fermentation down which is really the hard part

Is it necessary to pasteurize when pitching Sourvisiae after fermentation? Enjoyed you videos.

Based on what I've learned since making this you do not need to worry about sour bacteria infecting gear with those yeast (sourvisiae/philly sour) it just produces lactic acid during fermentation but you can clean as normal

Very well cleared explaining of methods about ways to make sour beers! I never tried Sour beers myself, as I'm more cider lover XD Also, I thought Lime and Vanilla don't mix.

Thanks! And I would say the vanilla flavor is very light with the amount I used. More to complete the key lime pie theme but totally could be omitted if you don’t like it

@@TheBruSho Anytime! Nah, not like it's bad or anything. I'm sure vanilla does add sweetness that may combo lime flavour as long it doesn't overpowering. Similarly, how I used orange and elderflower for brew I made. I'll have to see if the tastes well balance or not.)

Thanks a bunch for this video! I'm just starting to get into brewing and I've always been interested in trying to brew my own gose and this one seems super interesting to me. I do have one question though, in the listed recipe you have: "Boil for 30 mins, 0.25oz Motueka @ 30min, -0.5oz Motueka @ flameout" Is there a typo in this? Wouldn't this just be adding all the hops at 30 minutes or am I misunderstanding a step?

Hey thanks, so to clarify: Only boiling for 30 mins. Adding the first .25oz at the top of the boil and the .5oz at the end of the boil

I didn’t, I think it’s alcohol base so I wasn’t worried. Plus the pH and and alcohol help to protect the beer too

I just made this recipe up but Anderson Valley and Dogfish head have some well known and fairly available examples in the US.
