"Hands" just means they need somebody to carry out the plates. you hit the nail on the head about Richie. the more things change, the more he has to accept the fact that Mikey is truly gone and he's not ready to deal with that yet. Eben Moss-Bachrach does an amazing job of portraying this, as does the rest of the cast. it's easy to forget that Mikey only died about 6 months ago, so they're all still grieving. I'm so freaking excited for your reaction to the next episode! 😃

The most relatable intro I’ve ever seen, breaks my heart every time because I know exactly how Richie feels retelling that story.

Quick glossary of kitchen terms you'll hear in this show: "Behind" means, of course, you're passing behind someone, so they shouldn't make any sudden moves. "Corner" also obvious, you're coming around a corner and don't want to crash into another person should they be doing the same. "Hands" is how you call for someone to move food from the kitchen to the customer. "Heard" is acknowledgement that you heard and understood what someone else said. Some kitchens prefer not to use this one, and instead repeat what was said back to the person who said it, to make sure there's no miscommunication. "All day" means the total number of orders needed. "Fire" just means start making a dish. "Expo" is the expeditor, the person who tells the entire kitchen what orders they have and when "Front Of House" and "Back Of House" are the servers/people dealing directly with customers, and the kitchen crew, respectively. "86" means something is no longer available. You say for example "86 the chicken" meaning there's no more, so FOH should stop taking orders for chicken dishes. There's a lot more of course but those are the basics

One of the things I never realized, but someone else pointed out: In the flashback, Mikey starts out making the dish, but Carmy finishes it. Very symbolic.

From watching the show I think they shout "Hands" when they finish cooking and plating the food and it's ready to be served, to get somebody else to bring it out to the customers. And yeah Jon Bernthal is such a great piece of casting, he really nails Mikey as this larger than life character who's so full of energy that you instantly understand why Richie (and everyone else) liked him so much and felt his loss so deeply. Also it's a fun little Punisher reunion between Bernthal and Ebon Moss-Bachrach.

Richie only connection is with Mikey. Without Mikey he has no claim to the restaurant or his position. He has no blood ties to the family, they could have toss him out easily. That puts him in a very vulnerable position on top everything else he is struggling with in his own life.
