Obviously Sydney isn’t happy with how Carmy is handling things, and I keep remembering how she told her dad that she doesn’t think she can do this again (“this” being starting up a new venture or restaurant). It’s tough to watch.

What this episode showed us imo is that Carmy is becoming that a-hole chef he worked under in NYC (Joel McHale, season 1). He doesn't listen, he verbally berates his staff, he comes up with insane rules and he lets his feud with Richie get in the way of efficiency. Ideally a CDC should listen to FOH to understand what's going on and why there are problems, but what Carmy does is "there is a problem, find a way to fix it, I won't change anything tho". That is just not how it works, and as Richie says, he's not integrated

Carmen’s mind is so chaotic. He is also punishing himself because of what happened with Claire, and opening night and only God knows what else.

I know he quit because it saves time but damn give our boy a cigarette lol. He needs to chill!

Someone said that the fork on the floor like that means that the person at that table is a Michelin Star rep at the, but the only thing is that this episode only covered one months worth of The Bear being open, and they normally come after two months, so Idk.

This season feels like a completely different show. The first two seasons were basically everybody besides Carmy finding their place and stepping up for Carmy’s vision that he had for the restaurant. At the beginning of this season, every character is at a perfect starting point for high quality restaurant service, but Carmy is still a bit too eager and rushes things before they’re fully ready. His staff now have the skills to keep up, just not the experience to work through it consistently if that makes sense. Carmy has both and just needs to be able to go back to that field place where he felt genuine happiness and also talk with Claire. His troubled personal life is now encroaching on how he treats everyone around him just like his old mentor, which NEEDS to change. You can’t help but feel a bit bad for him though, he’s sort of been alone his entire life.

The end scene I think is exhibiting how dysfunctional the kitchen is, and how apparently the tickets fell to the floor more than once and this last time someone even stepped on them. Sydney is just at her wits fucking end.
