My favorite cookie is the one with macadamia and white chocolate.
This cookie recipe is the most delicious I've ever eaten.
▶ Ingredients (about 14-15 cookies)
-90g butter, 75g muscovado sugar, 140g cake flour, 30g egg, 2g vanilla extract, 2g salt, 1.5g baking soda, 70g white chocolate chip, 40g macadamia, 20g cranberry
1) Put butter at room temperature and make it completely soft.
2) Add the brown sugar and salt to the butter and whip until the butter color becomes brighter and the volume is about 1.5 times larger.
3) Place the egg at room temperature and keep it whipping. Also add vanilla extract at this time.
4) Sift flour and baking soda, and mix them with a spatula until you can hardly see the powder.
5) Put white chocolate chip, macadamia and cranberry and fold it with a spatula.
6) Pan using cookie scoop. I used a 4cm diameter scoop. It is good to make 40 ~ 45g each and make it round by hand. Press it down slightly with your hands to make it flat.
7) Bake 8-10 minutes in the oven at 170 degrees Celsius. If you bake less, you will have a softer texture. If you bake more, you will have a crispy texture. Adjust the baking time to your liking.
* My oven is strong because it is a convection oven. If you use a domestic oven, increase the temperature by 10 degrees.
* It's better to use Muscovado than unrefined brown sugar. Muscovado is easy to buy on the Internet.
