Why is it strange? He explains his reasoning. In modern barbecue joints, such as Franklins, there is more of an emphasis on the technique and science in achieving deliberate results and maximizing the good barbecue has to offer, while minimizing the bad.

Nick is a great man, he is a good presenter who obviously cares about food. highlighting some of the lesser known amazing foods of many states, especially my home state of Texas. Who cares about is past as a skinhead, he has renounced it and apologized. Everyone makes mistakes as a young adult, as we are easily indoctrinated into ideologies and beliefs. He stepped away from it and is now doing great work as a meat eaters spokesman.

So I thought eating everywhere else (including the restaurants shown on this video) thinking I am not really missing something special. Boy I was wrong when I finally endured the line and tried their menu. Ate twice there already and no doubt in my mind: the brisket, beef ribs, and pork ribs are the BEST in the WHOLE WORLD. There is a reason why the line is always long. Can't wait for my 3rd visit.

How crowded are they at lunch and dinner. How long have they been in business. The more the place looks like the pits haven't been cleaned since Carter was President the better. Also I have never eaten at a Black BBQ joint that wasn't to die for. In the last 20 years I've eaten at two joints where I would not go back. Both were less than a year old. Franklin’s is amazing but the first time I went there I didn’t even know what it was and was pissed we had to be at a bbq at 8am to eat lunch. It is amazing but unrealistic to expect people to constantly wait that long to possibly get food. And the worst part is that people start cutting and you see others that know the people that work there and go in through a back door and get their food in 5 minutes. That was my biggest issue with franklin’s.

Is the food really that good that people would wait 6-8hrs in line when I could go to another bbq place and just enjoy a quiet lunch at lunch time

@@Soshi12005 it is absolutely some of the best bbq I've ever had, but there is certainly a "hype" element involved. Nowadays, if the line is long I go immediately to Micklethwaits trailer down the road. It is so good. Or La bbq.

Just a correction to your statement about Texas mostly serving all beef sausage. That is primarily true outside of the "Golden Triangle" between Austin, San Antonio, and Houston. The Area between 290 and I10; however, is influenced primarily by Czech and Polish immigrants that arrived between 1850 - 1900 and are known for pork/beef blends and even in some cases 100% pork sausage, especially during times when beef is expensive. Rule of thumb if it's a Barbecue joint ran by Central Europeans it's more than likely going to involve a beef/pork blend in Texas.

I love the comments that Nick Solares gives. Fun guy to listen to, sounds like he knows his stuff. I'd like to see more of what he has to say. That camera though...does it still take film? Can you even buy film these days?
