Hey guys! Welcome to my kitchen! Today I'll be sharing a very simple and quick chicken tikka masala recipe. I know Indian food can be intimidating to make given all the spices that are used - but fear not, it is super easy to cook and to impress your family and friends with! Recipe listed below.

For the chicken marinade:
2 chicken breasts, washed/cleaned, cut into chunks. Or you can use boneless chicken thighs
½ tspn each - turmeric powder, cumin powder, coriander powder, black pepper, chili powder, paprika, garlic powder, onion powder, garam masala (all spice)
¼ cup lemon juice
2 tbsp oil
Mix all of the above ingredients and let the chicken marinate for at least 3 hours or overnight.
After 3 hours, put the chicken on wooden skewers (soaked for 15 mins so they don’t burn in the oven) and bake in a preheated oven at 350*F for 20-25 mins.
For the masala (gravy):
Oil
1 medium onion, and 4 cloves of garlic, made into a paste
1 tspn ginger paste
½ tspn each - turmeric powder, cumin powder, coriander powder, black pepper, chili powder, garam masala (all spice).
Salt to taste
2 tbsp sugar
tomato sauce or crushed tomato puree (2 cups or as needed)
½ cup heavy cream
Cook the onion/garlic paste in oil, add ginger paste, and let everything turn to a light brown color.
Add all the spices listed under masala and cook till the raw flavor of the spices can dissipate. Add ½ cup of water and let the gravy come to simmer. Then add salt. Mix well.
After a few mins, add in sugar, and heavy cream, and let the sauce simmer on low heat for 5 mins.
Take the chicken off the skewers and add it to the masala. Mix everything well, and let simmer on low for 5-10 mins.
Our very easy, and quick chicken tikka masala is all ready to eat! Serve with white basmati rice, and/or naan (Indian bread).
