Bicol is a culinary adventurer’s dream because of its diverse delicacies like laing, kinunot, tinuktok, and many more. What do these dishes have in common? Coconut. Bicolano food is famous for adding coconut milk or “gata” to its dishes. Join Erwan Heussaff as he tastes his way through the Naga Market and the nearby eateries to taste the authentic flavors of Bicol. @@mmaighrd Bikol is the common name referring to the entire Region V (Camarines Norte, Camarines Sur, Naga, Albay, Sorsogon & Masbate). It is the same name as well we called our dialect.

As a Bicolano, growing up, I thought gata is the default ingredient for all the vegetables because we eat with it everyday. Not until I worked in Manila where I usually get served disappointingly bland and uncreamy gata dishes so I resort to meat ones instead.

There are other Bicolano dishes that you should try, Tinutungan, Ginataang Kamias and Ginataang Santol. They are not well known like laing but they give so much flavor.

Thank you for this! ❤ from a Sorsoganon.. also, I have a theory that the use of coconut became predominant in Bicol because of a larger group of Indians inhabited this region in ancient times.. it's primarily vegetarian and spiciness, with just tweaks for the seafood we have in the region, and other meat for the local palette.. you will recognise the Indian genes on most Bicolanos

Lumbôd (Buko)- For salads, can be eaten raw since the coconut meat is so soft and sweet. Sunó- For kakanin pwedeng pang garnish sa kutsinta kasi juicy pa sya. Lukádon- Pangkakanin Laya- Yan yung pang-gulay talaga, dyan mo makukuha yung tinatawag nyo sa tagalog na Kakang Gata. Yung unang piga yun yung coconut cream. Yung pangalawang piga yun yung coconut milk. 👌 also Erwan, coconuts are natural laxative so please don't drink raw coconut cream/milk sasakitan ka ng tyan. lol.

Great content thank you for featuring my home province. As a Bicolano masakit sa mata yung ginamitan ng water based ang pagluto ng Laing at Kinunot it should be gata lahat, first is dapat ang gamitin is yung pangalawang piga then second is yung unang piga hanggang magmantika siya. Iba kasi lasa ng coconut cream or any preserved gata kumpara sa freshly squezzed na gata.

Should've tried the dinuguan more. I think Bicol has the best version of dinuguan. It's creamy and not too sour unlike the other versions in the north.

Thanks for doing this Erwan. There's not a lot of Bicolano culinary representation in Filipino restaurants in Calgary and Montreal (Canada-wide even), so it's to see what other gems we're missing.

We have a farm in Bicol filled with coconut trees. I go there to drink coconut water and eat coconut meat. We will bring the rest to our house for buko salad and coconut milk purposes. You can’t beat fresh coconut, especially if it’s in the coastal area.

The traditional Pinangat (it actually reminded me of lasagna but in a leafy version😂) and Laing that has this drier texture..makes me hungry. Its the best I've eaten in Bicol.

Very informative, when I visited a remote place in Mindanao, as a bikolano, I cooked kinunot because of abundance of pagi in that place, the natives ask for more....ubos lahat..

Camarines Su's "pinangat" is actually called "inulukan" in Albay. I had a friend from Camarines Sur who brought home with him pinangat bought from Camalig and his family was like "Bako man masiram. Mayong laog si pinangat." Haha.

I'm a Bicolano and now staying in Makati, I'm from Naga City. My problem here in Makati is the price of the nyog. So expensive...we usually use 3 coconuts to cook for a single dish. We love a creamy, and oily dishes...hahaha

Oh wow this adds knowledge again for us about coconuts. The detail is really enlightening. Now I understand a bit of the complexity and how a coconut can affect the end product for food. I wonder if the region will adapt ghost chillies easily...maybe this will emphasise the angry component of a coconut stew...best combined with coconut cream from a laya' stage of coconut. I'm pretty sure the rest of Southeast Asia would use also use this, especially Muslim Mindanao, East Java, coastal Borneo, coastal Sumatra, and Central and Southern Thailand

Spicy Tinuktok ang pinakagusto kong luto sa gata na kahit anong sahog, kasunod nun ay yung spicy ginataang alimango na may kalabasa, spicy laing, bicol's express, adobong hito sa gata, dunuguang may gata, ginataang ug-og, ginataang puso ng saging, ginataang santol at marami pang luto sa gata. 😋 😋 😋

finally someone explained that there are stages in the life of a coconut. that each stage has different use in our daily use in our dishes. I have been living in Rizal for about a decade now but my week does not pass without dishes with gata and if not sili. Savory and spicy! how was that for a Bikolano/Bikolana. Thanks for featuring this Erwan!

Bicolanos put gata in almost all its cuisine. My mom put coonut in dinuguan, in caldereta, even in kare kare.
