Being completely surrounded by ham...I'm pretty sure this is Alessio's version of heaven. I can smell all this through the screen. First you as mites and then all the sleep masks popping up...the editing in this one was chef's kiss. And this is definitely a memorable experience for the both of you! Friuli is proud of their heritage, and it doesn't take long to see why! Prosciutto in northern Italy dates all the way back to the Celts who first began preserving pork with salt and the Romans who later began air curing. There is evidence of a market taking place in San Daniele as far back as 1063, so it’s likely that, by this time, the curing and selling of prosciutto was commonplace in the region. As briefly explained in this video, it's because the people of San Daniele had discovered that the area provided the perfect conditions for air curing. Winds blowing down from the Carnic Alps meet the breezes coming in from the Adriatic Sea, creating a unique micro-climate and providing optimum temperature, moisture and ventilation conditions. It was soon discovered that prosciutto was kept perfectly without the need for added preservatives. It’s said that even Napoleon’s army enjoyed it and took large quantities of it back with him to France!

Thanks for the history lesson on Prosciutto. San Daniele is a brand name of Prosciutto in Canada, but made in Canada. The end result is not the same as the real goods made in Italy. Canadian makers of Prosciutto tend to over salt the meat.

It's always a pleasure when people try and love our prosciutto and they come here in San Daniele. For me it's home, for the rest is an experience which reminds me how I'm lucky to live here.

As for the history of its rival Jamón ibérico: The finest of all jamón ibérico, the classification of which is regulated by stringent Real Decreto del Reino de España guidelines, is made from a special breed that are fed at the last winter of their lives with only acorns, or bellotas, and free-range pasture. In 77 AD, Roman author and naturalist Pliny the Elder praised Iberian ham, saying there’s no animal that affords a greater variety to the plate and that they offer fifty different flavors. After Moorish rule which banned pork consumption and ended with the fall of Granada in 1492, jamón ibérico became an integral part of the country's identity. That same year, Christopher Columbus reached North America because of Iberian ham he brought with him.

One of my aunts was from San Daniele. Her mother would send prosciutto to her a couple of times a year which zia would share with us. I still have that wonderful unique taste in my food memory banks. Alessio ,my father was from Castelnovo del Friuli. Grazie Jessi and Alessio

Aside from the delicious prosciutto: San Daniele and the whole region is a marvellous place worth visiting! Spent my childhood near there and am so happy to see all those videos by Jessi and Alessio! My famil went to Aria di festa di San Daniele every year throughout my childhood, and there is nothing more delicious than a very thin sliced piece of prosciutto di San Daniele, followed by a cafè at the piazza and a walk through the neighbourhood!

San daniele!! One of my favourite places in the friuli. We spend a day swimming in the fiume tagliamento with family followed by prosciutto in San daniele. Life doesn't get much better than this.

Good prosciutto is not salty but has a sweetness to it. It has to be sliced paper thin and served at room temperature.

I'm in shock. Mold. Mites? We've been told about pork causing the most serious food poisoning when it goes past its date. I'm totally stunned. Learn something new everyday.

The ham is salted and air dried. It also hangs for months or years before serving. The whey from Reggiano cheese is fed to the pigs so that goodness comes through in the finished prosciutto. There is no risk of food poisoning because the meat is cured and any harmful bacteria removed. The Italians have perfected food preservation whether it is pork, wild boar, codfish, cheese, or sausages.

There are some French cheese varieties banned in the US because they are shipped with the mites intact and there is no easy way to remove them.

Not to mention the American fear of raw milk cheese. Raw milk cheese is the best. There was a cheese I tried in Italy that was fermenting with maggots on top. Americans would turn a nose up at that, but once the maggots were pushed aside the cheese was amazing. I heard a rumor that English Stilton used to have a problem with creatures on the cheese. The vendors used to douse the cheese with port before eating to kill them off before serving. To this day the English will eat Stilton accompanied by port.

Good Italian Prosciutto is hard to get in many countries. In Canada, meat producers have tried to make their own. The problem is the end result is overly salty and lacks the flavor of Italian Prosciutto. I will however never pass an opportunity to eat Spanish Jamon Iberico.

In two words: Carlo is the Southerner and Alessio the Northerner. Just a little bit of rivalry which often leads to exacerbate the comparison, but in the end there isn't a big difference. The Alps have historically been a sufficiently impenetrable barrier to isolate Italy geographically and etrically from the rest of Europe, and such as to allow the development of peculiar and independent cultures and traditions. I'm not saying that there haven't been influences from the rest of Europe, but never such as to outclass the relative cultural homogeneity of the peninsula

Patricia, There is a rivalry to say it politely between northerners and southerners. The money tended to go south for decades and that built resentment. What it also did was give us the benefit of regional differences in Italian food and culture. There are also linguistic differences in dialects that formed. But always say anything Italian must be good, so enjoy the diversity.

This video, unfortunately, does not talk about the scandal and violation, some years ago, of the specifical production regulations of Parma and San Daniele's ham in the production district of Parma and San Daniele's towns. A large scandal that came to light after the ministry's investigation. The swines used were Danish Durok type, not included in the specific production regulation to obtain the DOP certification. Where then are the differences and peculiarities with the national generic normal ham??? Furthermore, the qualità control offices were suspended and placed under administration for several months due to serious irregularities...
