The Best Keto Bread Recipe - Simply Amazing!
2/3 Cups Ground Flax Seed
2/3 Cup Almond Flour
3/4 Cup Oat Fiber (not oat flour)
1 1/4 Cup Vital Wheat Gluten
2 Tbsp Monk Fruit
1/2 Tsp Xanthan Gum Powder
1 1/2 Tsp Salt
3 Eggs
3 Tbsp Avocado Oil
1 Cup Warm Water (110°)
2 Tsp Yeast (Rapid Rise Dry Yeast)
1/2 Tsp Sugar (Honey or Maple syrup would also work)
Step 1
Mix warm water with yeast and sugar. Set aside to bloom (about 10 minutes) if it is not slightly bubbly on top your yeast has gone bad. Remember- not hot water which will kill the yeast and not cold water which will not activate it.
Step 2
Beat the eggs for 5 minutes
Then add oil
Step 3
(I do this step while the eggs are whipping)
Mix together all the dry ingredients
Step 4
Slowly add both yeast and dry ingredients into the egg mixture
Step 5
Kneed the dough for 8 minutes
(I did 6 minutes in my kitchen aid mixer and the last 2 minutes by hand)
Step 6
Shape and place in bread pan. Let rise for 2 hours (or until doubled in size)
Step 7
Place in oven 375° for 30 minutes
Let cool for 20 before cutting.

I rarely, if ever, have made comments on any videos, but I have to make an exception to this one. I've been doing keto for over 3 years and have tried sooo many bread recipes over the years. This one is IT, everyone. I was a bit worried after I kneaded the dough and it seems a bit tough. I've made lots of non-keto bread, so I'm familiar with the process. After the 2 hour rise, the dough looked really good. I baked it and it kept its shape. It looked like regular bread, and what's amazing is that it tastes great. I tastes like really healthy regular bread, so there's a slight heaviness to it, but without all the net carbs. This is going to be my go to bread.

Best Keto Bread recipe? Definitely! Have made many breads and this one tops them all by a country mile. Many, many thanks. Keto isn’t necessarily cheap, and throwing away ingredients on failed attempts is not something any of us enjoys. A big thumbs up from me and my wife and a big thank you, too.

I made this recipe 2 days ago. This recipe is the only one that has produced a risen loaf on the first shot with the ingredients as described. I did make 2 substitutions, however. I used a small amount of honey in the water in place of sugar. I also used a stevia blend for the sweetener instead of monk fruit because I didn't have any on hand. Rise time was 1 hour in the pan covered with plastic wrap coated with oil to prevent sticking. The results of this bread are fantastic!

@@jaeernyl8874 I took a teaspoon and dipped the tip of the spoon in the honey. I would estimate a drop no bigger than a quarter inch in diameter.

I have been making this bread in my bread maker and I use just the dough cycle and it comes out great. I've not been able to make it for a while since I have an arthritic back and have been unable to get at my bread machine. I'm a bit better now and hope to do a new loaf soon, it'll be a great treat.

I just finished making this bread and it's a 10 stars (out of 5!). It did rise to double in size before putting it in the oven as you said. The taste is awesome and can't tell the difference between this bread and any other non keto bread! I cut a slice and put some butter and it and tasted amazing. Crystal, you should have your own cooking show on some national cooking TV channel. You are amazing! I can't wait to try your other recipes.

Hands down the best tasting Keto bread out there. The extra quantity of almond flour and flaxseed as opposed to others makes all the difference for me. I ate this with just butter without cringing. Much less vital gluten and oat fiber taste. No psyllium yoohoo, hate that stuff. Pretty sure beating 2 eggs helped a lot. Thanks so much. (Next time in bread machine to get better kneading) One month and 5 loaves later, still fabulous. I’v managed to bring down the vital wheat and oat fibre a little, extra almond and flax. Even less weird taste. Everything in bread machine for kneading but baked in oven. Thank you so very much Crystal.

After trying many recipes and none of them resulting in anything remotely like bread, I decided to try this recipe with hope and also skepticism. I am thrilled to report that I am super satisfied with the results! My loaf came out of the oven about 45 minutes ago and after cooling, i cut it up and tasted it. It looks, tastes and has the texture of a healthy bread. I am totally satisfied with this recipe. It is really filling too. I need to know how to store it and has anyone tried to make bagels, rolls or pizza crust out of this recipe?

Thanks for watching. You can keep it on the counter for a few days in a container. Or in the fridge for longer. I believe someone made it into bagels but I’m not remembering

Many many thanks!!! I failed on another keto bread recipe twice, looking good before baking but deflated afterwards no matter how long I baked. Since I have experience on baking regular bread, I soonly found out the problems. If you have similar problems with me, please give this recipe a try! 1.It calls for three eggs and lots of fibers which give this bread a really good supporting structure. 2. 375F & 30min is a great combo. Lowering the temp & baking longer is not a good idea cause the inside will not be fully cooked through while this keto toast really need to form a stable shape at a early stage. 3. If you happened to have a really small oven, bake it on the lowest rack with a pan/mat underneath, so the surface&bottom of the bread will not be burned. The bread will grow about half inch to one inch during baking, that's why you need to leave enough space. 4. If your bread touched the topmost part of your oven, instead of using a loaf pan, try a wider baking pan or simply make some smaller sandwich buns by dividing the dough into smaller parts and shape into round balls before proofing. 5. My proof time is 2hours @ 28°C. But for the 2nd one hour, I put a cup of boiled water besides the pan and then poured the water out and refilled it after 30min. Hope everyone can successfully bake this low carb bread at home!

I’ve tried this recipe - it’s Deidre’s Keto Bread recipe. I made it in a bread machine and used honey for the yeast instead of sugar. It’s delicious.

From what I understand, flax is a hormone disruptor. I am.going to try replacing it with psyllium since it lends chewiness to baked goods. The positive comments have convinced me to try it. Thank you.

Another person said that as well. From what I have read it’s not bad. Here is an excerpt I read about it. Lignans, which are the type of phytoestrogens in flaxseed, can change estrogen metabolism. In postmenopausal women, lignans can cause the body to produce less active forms of estrogen. This is believed to potentially reduce breast cancer risk.

I have never tried it with almond meal. I would guess it would be the same. You could always put the almond meal in the blender to make it almond flour though.

was that golden or brown flax seed? looks like golden...making today and will comment on results. The last bread recipe I made was a bit moist inside, so i sliced it and put in my dehydrator for 1 1/2 hours to dry out...it worked but what a hassle!

I use the xanthan gum for elasticity I have never tried replacing it but you could always try it and let me know how it works

Is it OK to use erythritol as the sugar, or will it have to be real sugar of some kind, I take it the sugar is to feed the yeast

Yes the sugar is to feed the yeast. You could use honey or maple syrup. I have never tried it with erythritol.

@crystal, did you leave the dough to rise for 2hrs at room temperature or is there any special condition? Secondly, since I want to try a small batch first, is a container with sides necessary or can I bake it on a pan? Will it rise? I apologize for the basic questions but I'm new to keto and baking in general and I'm missing bread. Thanks.

Yes,I did let it rise at room temperature for two hours. When letting things rise a good rule of thumb is the warmer the better obviously not hot though:) I would suggest using some sort of container because then it will rise up instead of out. Also the bread pan that I used is a little smaller than your average one from target. I linked it in the description. No question is too basic, we all start somewhere. Thank you so much for watching

Not moist, cause no psyllium. Best ne so far, would still prefer to use little less vital gluten, going to try 1 cup next time.

Needed this by hand for the whole time as I don't have a mixer yet, but it was sticky and sticking to my hands, it wasn't dry in the hand like yours, what can I dust the worktop with to aid in losing some of the stickiness

It is super sticky I don’t think you should add anything to it. Only maybe a little almond flour

Hi Crystal, I tried your recipe by hand (no mixer) for the first time and it came out lovely. If wanted to try the recipe without eggs, will that interfere with the quality/ texture of the bread - and if not, do I replace the eggs with another ingredient?

Do you need the xanthan gum since you have used wheat glutin? Found that the xanthan gum yields a wax slimmy chew?

It’s hard to troubleshoot without being there. But I’m guessing you need to keep it in the oven a little longer. Did it rise nicely?

@@CrystalsCleanKitchen yes, it did ruse very good. As long as it got out around 5 mins, the surface started to be flatten and wrinkle. BTW, instead of 2 hours of waiting for proof, mine was risen very high after 1 hour, therefore I started to bake10 mins later

Hi thanks so much for watching. Unfortunately I have not tried any substitutions. Oat fiber is made from grinding the non-digestible oat hull. So I’m sure what could replace that. Sorry.

Yes u can.. I’ve been using a very similar recipe for a year now... it’s pretty simple too... add the Luke warm water first, directly into your bread making tin...then add eggs lightly beaten, flours on top of the water, just make sure they when adding dry active yeast to keep it away from the salt! Kills yeast! Basically sprinkle all the ingredients around the edges on top of the flours trying not to mix salts n sugars n dry yeast.. I use butter than oils tho.. Turn machine to your favourite setting...comes out perfect 🤩 And you can always just use the “dough” setting.. it does all the mixing the 1st rise.. take it out, kneed a little, divide and make rolls.. do your 2nd rise in a warm area till double size and bake as per normal in your oven at a setting that u would use.. mine 180C fan forced ... it’s quite that simple 😀

@@oifunlee8111 I found a recipe that combines all the dry ingredients first before adding to the liquid. I had been using a recipe I saw on the Keto King. Half the time it wouldn't rise, so when I tried the other recipe that combines the dry ingredients together before adding them to the bread machine, I wasn't expecting it to work. I was thrilled when it did! I started to think there was something wrong with my ingredients, even though they were all fresh. Great to find out they were fine, as they can be expensive to buy. urbancowgirllife.com she calls it low carb bread machine recipe

Sorry no photo.of buns from your bread recipe..I froze them. In the oiled English muffin rings,(remive from rings before baking)rose well(after 2 hrs) and baked for 25 min. 100 grams each...for 8, next time 80 grams or 75. To make 10..I flatten dough in the rings before the rise...Were delicious...didn't fall apart for burger...I'm so good

Hello! Thank you so much for this recipe! Doing it right now in fact. I have 2 questions: on what speed did you put your kitchen aid for the 8 minutes kneading? Also, didn't your kitchen aid "jump" after a few minutes? I had to stop it after 5 minutes as the jumping became worrying.

Definitely stop it when your kitchen aid starts working too hard. I made the bread multiple times and didn’t stop it and I had to replace a piece that broke. I would say kneed it by hand the last three minutes

@@CrystalsCleanKitchen So verdict.... [drums rolling]: Thank you! It came out wonderfully! It didn't puff as high as yours but it is so soft and looks like wheat bread. I substituted oat fiber with psyllium husks as oat fiber is not easily available here and international orders will be difficult with posts delays etc. But it came out good. Am going to keep it out of fridge as this will be my breakfast for the week ahead. Thank you again, will check your other vids!

If you cut the bread into 14 slices, each slice is 5.4 carbs. And yes many people have done that and it turned out well for them.

I used a different brand but that one should work also. You could replace the allulose with monk fruit or something similar

WOW!!! Since the recipe is similar to Diedre’s which can be made in a bread machine, I made it and it is EXCELLENT!! I have a Cuckoo Bread Maker (Setting: 2lb, Light, Gluten). I beat the eggs in bowl for a few minutes before I added them to the bread machine pan insert. I love Diedre’s bread but find it’s often too wet/moist inside. This recipe does not have that issue. The flavor is close to a light wheat. It’s delicious (and I’m not even a fan of regular wheat bread so that’s saying a lot). The baked loaf was a perfect size and shape. This is now my go to bread recipe. Thank you for developing this recipe and sharing it!!

I tried and it was an epic fail. I suspect that it’s because I substituted psyllium husk for oat fiber because the store didn’t have any. The dough never really formed together, it was like a shaggy dough that was very gummy. The almond flour i got also could be a little more ground, it seems a little coarse to me. The dough never really rose and it was super dense. Bummed me out big time. I ordered some oat fiber and will try again when it comes in and hopefully it will work.
