Best LEMON Cake 🍋 with BLUEBERRIES I've ever tasted, super easy and moist!
This cake is one of my favorites, I love the combination of tart lemon and blueberries. The coolest thing is that you can use other fruits of your choice like blackberries or raspberries. Make this cake for your guests and it's a guaranteed success. It's super quick to make, you don't need a mixer or blender.
Ingredients:
Homemade Buttermilk:
1 cup of milk (240 ml).
1 tablespoon of lemon juice (15 ml).
1 1/3 cup of sugar (270 grams).
1 cup of oil (180 grams).
4 eggs (220 grams)
A pinch of salt (2g).
Lemon zest, I used Sicilian.
2 cups of wheat flour (300 grams).
1/2 tablespoon of lemon juice.
1 tablespoon of baking powder (10 grams).
180 grams of blueberries, can also be frozen.
Lemon topping:
1 can of condensed milk
1/3 cup lemon juice (60 ml)
lemon zest
blueberries to decorate.
Mint leaf to decorate. Note: my cup has a capacity of 240 ml.
