This is the pina colada recipe in ATK's How to Cocktail (highly recommend), I've made it a few times. Very tasty and strong, not too sweet. I use 4 oz rum instead of 6 oz.

You need to add an 8th tsp of xanthan gum and that completely prevents it from melting/separating in the first 5 minutes. this is how Garret Richard at Sunken Harbor Club in brooklyn does it. he learned it by studying starbucks frappe recipes

Thank you for this simple recipe. Very often with fewer ingredients, the better the outcome. I use a Thai brand of coconut cream called Mae Ploy. It's creamy & has good coconut taste.

When my brother was young, I made him a Virgin Pina Colada and he loved it. From then on, he would ask me to make him one all the time. When he grew up, I forgot to ask him if he preferred the alcoholic Pina Colada.

A less sweet Pina Colada is also great if you prefer non alcoholic ones, as I do 🙂

The Piña Colada was invented in Puerto Rico. The traditional recipe uses coconut cream, as is stated here (not cream of coconut - they are different things), and our favorite brand is Coco Lopez. It also uses Puerto Rican rum. Don Q and Ron Barrilito are best, but you can use any Caribbean rum in a pinch.

Zelma8 - you've got it backwards, unfortunately. You're right that the traditional recipe calls for Coco Lopez, but Coco Lopez is a particular brand name for cream of coconut, as WarUlt said - NOT coconut cream. The video is completely wrong in saying that cream of coconut is "corn syrup with coconut flavoring." Cream of coconut is whole fat coconut milk mixed with water and sugar. For anyone reading this - if you're confused by the above, which is understandable, just buy Coco Lopez for your pina coladas. You can't go wrong with that. (And Coco Lopez says "cream of coconut" right on the can). If you use coconut cream instead, as per the video, I'm sure you can still make something very tasty, but it will be much less sweet than what you are expecting a pina colada to taste like, because it is a very different recipe than what most bars make.

Its fine, as I said above, used to bartend and we used pineapple juice. Just make sure you get the quantities right. So just pour the coconut concoction, without the pineapple juice, in a glass and sip away. Add pineapple juice as you go until you get your recipe.

Just open and drain canned Pineapple. Spread on a parchment lined sheet pan and freeze. Not exactly the same but should get you close

If you’re talking about your mouth skin being irritated and bleeding, that’s not an allergy, that’s just an enzyme the breaks down protein, but thankfully cooking breaks it down.

I, too, am sensitive to fresh pineapple. It makes my throat and tongue swell and tingle. I absolutely love it but now avoid it! I do still use canned, and I will cook fresh pineapple to make it not bother me! Grilled with a brushing of coconut milk and sprinkled with cinnamon/sugar... divine!

The best piña colada I ever had was made by a bartender in the Niagara Region and he has never tasted alcohol in his life. I've never had a good one since they closed the doors in the private club (my Father was a member and brought people there for business meetings) and I do miss them so. However, my body now has decided it doesn't like rum and I'll get crushing chest pains when I drink it; thanks hiatus hernia 😢

I like the taste of rum, but unfortunately rum, even a small single serving, gives me a raging headache. I wonder if anyone here has tried Ritual Zero Proof, non-alcoholic rum alternative, and whether it’s a decent substitute for rum in Piña Coladas.

When I used to bartend, we would use a piece of pineapple for the garnish, but use pineapple juice in the drink. Just see what works for you, not everything needs to be so fussy.

Get a can coco lopez cream of coconut, follow the directions on the can and add Parrot Bay rum and a teaspoon of sugar. the..best. Like 3 minutes

Sad times. I've cut back, myself. They say it causes many cancers now, along with loads of other issues we've known about for decades, so it's for the best. Kind of shocked alcohol is legal and cannabis isn't (in the US - federally).

A lot of people were complaining in the comments about them advertising their channel and too much fluff/not enough content. Now everybody is complaining about how it's jarring without the introduction. Never a shortage of people complaining about free content

I'll stick with Cream of Coconut, pineapple juice, and skip the simple syrup and blending. Waaay easier, waaay faster, and I can make each cocktail to individual tastes. And most important…tastes aMaZiNg! Also, never blend ANY cocktail, even if it's how some 1970s relic cocktail concoctions were "traditionally" served. Blending always waters down your drink - it's unavoidable (unless you like watery drinks, not my thing).

In my vitamix if you don't add the liquid first it won't necessarily make it down to the blades the way it should!
