I kinda want to make this, so I've put the recipe together for easier reading! Marinade: 100g dark soy sauce 200g water 1 T sugar Crushed garlic Chilies, chopped Onion, chopped large A couple konbu pieces 1.) Place all marinade ingredients into a saucepan 2.) Simmer for 15 minutes and cool completely 3.) Slice up sashimi salmon (please make sure it's sushi grade or freeze it first!) 4.) Layer salmon in a container with fresh garlic and more chopped chilies, and place lemon slices on top 5.) Pour marinade through a sieve over the salmon 6.) Marinate overnight 7.) Eat as is or serve over rice topped with the chilies and garlic, with some some lemon juice squeezed over the top as well.

Yeah can confirm that this is super addictive .... I also love to cure my fish in kombu for about an hour before slicing it for sashimi, improves the texture, flavour and aroma.

You should probably clarify that you're using "Japanese dark soy sauce" which is essentially "Chinese light soy sauce". Chinese dark soy sauce has a much thicker consistency and less salt. Chinese light soy sauce is basically the standard soy sauce you'd find anywhere. Like kikkoman brand.

Soy sauce, sake, mirin and toasted sesame seeds marinade with tuna or mackerel are commonly enjoyed in my hometown (mackerel is popular). If you want to go with sugar free I would recommend mirin 💮

Mirin contains sugar though. It is a sweet cooking wine so it can't be sugar free unless you are buying something really sketchy and contains an artificial sweetener instead.

@zacherybutter7349 most salmon farms are financially not viable without subsidies and do more to harm native salmon stocks than they produce fish. A more wise investment would be to improve native salmon spawning grounds and also increase the estuaries leading to majour waterways that have been chocked off by the commercialization of the rivers and riverbanks

Random tip for this. If you want it fast measure the water and freeze it. Then pour the hot marinade into the ice and you have cold marinade.

If you prefer Sweet marinade flavor, i recommend to use Kecap manis (Sweet soy sauce). It's easy to use and uplift your salmon game by those hidden spices flavor in it. You can also dilute it with water and brush/sprey on salmon right after finished airfry giving more aroma pierce through every windows of your neighbor house.

@@ivk4808 I'm Glad it help 😃🙏 I have to tell little info for you first, even Kecap manis made from Soy sauce but it also contain many sugar in it so it's main taste is "Sweet ahead of Salty". ☺️ So you still have to use "Normal soy sauce" as main Salty flavor and then use Kecap manis as support Sweet flavor(instead of any sugar) then you will find it's taste go along with normal soy sauce much better than any sugar for any fish dish. 👨‍🍳 Having Kecap manis is like getting hidden weapon from SouthEastAsian kitchen. From Roasted chicken or pork all getting good color and aroma by use it as finish touch. Can also revived any over boil or over steam chicken meat just use it as a dipping sauce. 👍👍 If you master this sauce you whole Chinese-influence dish in SouthEastAsia will open for you to explore. Have a good meal! 🤗🤗🙏🙏

Marinate a soft boiled egg overnight in the same marinade (i recommend adding chili oil too, for some heat). Amazing topping.

1) Frozen, never fresh, farmed salmon is safest. If you can’t trust grocery store salmon with those labels, go to a fishmonger or japanese market. 2) Depends. Asia is huge, from middle eastern cuisine, to russian, to indian, and to the eastern asian countries people usually think about (S. Korea, China, Japan). If you’re going for the Eastern asian cuisine, try making your own Kimchi. It’s easy and delicious. If not, fried rice is simple and versatile.

If you have a blow torch, I highly recommend searing it for a smoky depth of flavor. I also second everyone else that mentioned a pasurized egg yolk!

I always make nigiri out of it, whenever you make a bowl, you sometimes have too much rice or too much salmon(in the bowl, can never have too much). Making nigiri gives it that perfect amount.

In Japan, we call it "Zuke" like Zuke-salmon. We often do it with tuna, called zuke-maguro (tuna). If you go to a sushi restaurant in Japan, you should order it! You won't regret:)

Hey, just a tip if you're going to use konbu, you shouldn't bring it to a boil it pulls out the bitter flavors of the seaweed. I think an easy fix would be letting the konbu soak in the mixture after its been brought to a boil and been set to cool for about 15-20 mins that way you have enough heat to extract the MSG and other flavors from the konbu but you don't leach any nasty ones.

You have got to try this barrell aged Japanese soy sauce i came across, it's called Yamaroku and its a bit expensive, ($45 for 18 oz) but it is amazing, the bottle i got lasted me over a year so the 45 buck wasn't a bad price but if you use it often then the price may not be worth it

Generally speaking, when it comes to unmarinated sashimi it lasts maybe 24-48 hours, after that it's risky. Since it's marinated, it miiiiight last a little longer, but I can't say for sure. Basically, if you make this, you should plan to eat it the next day.

That's kinda light and thin to be dark soy sauce. The ones we use for red braised pork or Hongshao Rou is imo.
