Jaxx Drinkwater Southern Cooking & BBQ

This was my first time using the Slow N Sear for rotisserie chicken. I'd say it turned out pretty well. A link is provided below if you wanna have a look at the Slow N Sear.
Also in the video I'm using the Weber Kettle 22" along with the Cajun Bandit Rotisserie kit. I'm telling you combining all 3 pieces of equipment makes for some fantastic cooking.
I also want to mention the spice rubs I used were John Henry's. I'm telling you, those rubs MELTED right in the meat, even the breast meat. And it made for a badA chicken salad the next day.
The wood that was used along with the charcoal briquets was Acacia wood also know as Camel Thorne purchased from Kudu Grills. it's imported from South Africa and it really lendss a nice flavor to whatever you are cooking.

I hated that I had the bust through on the legs. You think it was to much heat or the way it was tied making this skin to tight in those areas?

Damn, I am looking at rotisserie kits for my Weber now. Before all this craziness I have a Walmart next to my work and often would shag up a roaster for lunch & tater salad. $6 a cooked bird with a tub of salad for around $8 total, 2 awesome lunches with leftovers and no drive thru garbage like so many get. Roaster birds are so good, I need to get a kit! Cheers Jaxx!

I owe it all to that rub. It's crazy how some very good rubs out there just don't work on some things. This mix I think I just nailed it. Not sure I'll use anything else on chicken.

Hi Jaxx, you sold me on the Slow & Sear and the seasonings. I already have the rotisserie and the kettle. Think we could precook the potatoes some before placing in the kettle? The chicken looks amazing!!
@JaxxDrinkwater
@JaxxDrinkwater 4 жыл бұрын
Yes I do think that would work... That or I would cut the potatoes smaller and or add a splash of chicken broth to the pan just help it along. Next thing I would do is ad maybe a few less lit briquettes to the mix just to slow the cooking time down a bit and give the potatoes a little more time to cook without the chicken being done to fast.
