The Best Southern Fried Corn Ever

My mother taught me how to make this good ole southern fried corn that her mom had taught her to make. This corn is fried with butter and bacon grease plus the milk from the kernels gives it a creamy texture. Once you make this fried corn the way I make it you will definitely keep this recipe as your favorite go to!
Ingredients:
10 ears of fresh corn (shucked, washed, and cut from the cob)
3 Tbsp. flour (I used all-purpose)
3 tsp. sugar
1\2 tsp. salt
1\4 tsp. pepper
4 Tbsp. butter
Bacon grease
Instructions:
Shuck corn, pull of husk, and silks. Wash your corn and tap dry with a paper towel. In a large bowl, cut the corn from the cob with a sharp knife. When you begin to cut the kernels of the corn, cut only a small amount from the top of the kernels and not cutting the whole kernel from the cob. You want to leave more of the kernel in the cob so when you scrape the rest of the kernels from the cob it will have what my mom call the milk. (You can watch the video).
Scrap up and down the cob with a knife to get the milk. Once you have finished scraping all the corn off the cob you can add your ingredients.
Add the flour, sugar, salt and pepper to your scraped corn. Mix well.
In a large skillet with heat on medium, cook your bacon. Set the bacon aside and leave the bacon grease in the skillet. Now add the butter, Pour your prepared corn into the hot skillet. Allow the corn to cook for about one minute. If you had a big skillet as I did in the video make sure to turn your skillet around so that the corn can cook on that side as well. Be sure to watch your corn because it can get brown quick on the bottom and you do not want it to burn. After the corn have cooked for two minutes you can now move the corn around in the skillet. Adjust your heat to medium low. Make sure you are always checking the bottom of the corn. (You can watch the video). Cook about a total of 16 minutes depending on how much corn you are cooking. My mom is 91 and from Montgomery Alabama. And she could cook anything!!! Whenever I tried to explain fried corn to people they just didn't get it !!! Have you had it with okra and tomatoes?? Lawd have mercy!!!

My mom raised 6 girls and 2 boys, I was the youngest.She taught us to do everything as if we are doing it for God. If we didn’t do it right the first time we had to to it until it was right. I am so grateful she was so firm with teaching that to us. Doing something the right way and giving your very best in everything in life is a dying mindset in today’s world. She taught us to do it right even when nobody is watching you and one day it will become like breathing and she was right.

I grew up on fried corn. My mother used the exact ingredients your mother did. Another way we used to eat fresh corn was for breakfast. First, she'd fry up the bacon we were going to have and put it aside. Removing all but approx 1/4 tsp of the rendered fat, she then took fresh corn off the cob (about 2 ears) and added it to the skillet with a little salt and pepper. After sauteeing for about 6 min, she would crack open a dozen eggs (for 6 people) add to the corn in the skillet and scramble together until eggs were fluffy and done. She always made biscuits from scratch and whenever we saw this dish with the biscuits and bacon on the table, we knew it was going to be a good day! To this day, even if i don't always have fresh corn on hand. I fry and scramble my eggs in a little bacon fat. Talk about delicious!!!!😋

I definitely to miss my mom cooking too especially when you to to smell corn cooking in that bacon grease. ❤❤❤❤❤ Carry on a family traditions is one that I do a lot and I'm honored that my mother allowed me to watch and learn. I did get more hands on as I got older but did I miss shelling all the peas, butter beans, and shucking corn and other vegetables? No! 😆 😂 🤣 😅 Our father made sure we had plenty to do. He grew a lot in our garden and he had chickens and hogs that he would sell. Hello this is my first time watching you. Our family has made fried corn all my life. I have a hint for you. I was in my late 40s when somebody finally told me about how to make cutting the corn a breeze. They told me to put my corn in the middle of a bundt pan and I could not believe how quickly I could cut the corn without it sliding around. It was a game-changer for me. Not meaning to tell you how to do things that I am now in my sixties and with arthritis it has made this particular task so much easier on my hands and wrists I hope it helps you too sweetheart. My dad taught me how to make fried corn with the fresh corn 🌽 using the same ingredients as you , flour , sugar, black pepper, a Lil salt fry in skillet in small amount of corn oil. Also we made it more with corn in the cans cream style & whole kernel corn without meat just plain corn , we serve it with fried chicken , or pork chops. I'm old school oldest of 10 siblings I learned to cook at age 10 , I'm one of the best soul food cooker there is.😊❤

Meaning er didn't put no type of meat in the corn , we cook the meat separately , I forgot to mention the hungry jack biscuits. That corn looks amazing & creamy without you using cream style! Excellent making me hungry! Part 2!

Your video on fried corn reminds me of my Mother-in-law who has passed away. We would go to the Amish farmers and buy several dozens of ears of fresh corn. She made fried corn every Summer and put it in the freezer. We would cut and cook corn for days sometimes. I enjoyed this video so much and it brought back so many good memories. I’m a new subscriber now.

That's just how my Moma used to make it the exact same way in a deep cast iron skillet too, with home made biscuits sometimes with it, it was so delicious. 😋 Wonderful memories.

I still have my cast iron pans and use them everyday. My sister has an enamel covered Dutch oven and told me years ago how wonderful they are. Well I procrastinated just like you and last Christmas while at Sam’s Club they had one for sale for $39.00 I bought one and WOW WOW WOW!!! It brings water to a boil on my smooth top range faster than anything. I went back and bought another one, then found an oval shaped one for big soups and stews. Them and my cast iron are all I use now. I have never found a better set of cookware and I have a $400.00 set of heavy stainless cookware that you use very little water with them supposedly to keep the nutritional content of the food. I will take the enamel covered cast iron Dutch oven and my cast iron skillets over them any day of the week. I am on the lookout for smaller sizes of the enamel covered cast iron pots. My sister was absolutely right and I should have listened to her years ago! I am 67 in October so it’s never too late to learn!

I gave mine away to a family and never replaced it. I have a few new pots and pans that are still in the box. It's easier to cut corn off the cob is. to use a Bundt cake pan. Use the center to put the corn on it and start cutting

Let me tell you. My momma taught me to cut corn the exact same way. Both ways. And she fried it up the same way too. It’s been a while. I need to fry me up some corn. Every summer I cut and milk fresh corn and can it in mason jars. So in the winter I can still fry me up some corn. It’s so good.

Cooked corn for my husband tonight. As I was cooking he asked if I put onion and bell pepper in the corn. I said no we’re doing something different. When he tasted his corn he never looked up and kept telling me how good it was. Thank you Felicia.

Learned to make this from my wife's "Granny" in the 80s. But perhaps strangely, she did not use flour in the recipe. We would cook it down and the starches in the corn firmed it up a bit, still about 15 minutes. My addition is a shake of paprika and a dash of dried habanero. Occasionally a finely diced jalapeño in its place. Last year I found an ice cream scoop, almost a paddle shape that directs the spatter down. I used to use an antique silver serving spoon for the same reason.

I boil it first with a large cut up Russet potatoe with the skin (thus no flour needed), and add a stick of salted butter with the same amount of ears …… then scrape the corn once cooled, and continue to fry with left over turkey bacon air fried pieces (at least 10). So delicious with a few sprinkles of Slap Ya Momma spices too. 😅😅😅😅😅Marlene Tucker

My momma used a corn scrapper. Daddy grew white corn in the garden and she fried it up. It was saved in the freezer for special occasions like holidays. I don’t know why she cooked anything else that day because we ate every last drop of it. They were from Louisiana!

I was in Walmart early today, and they had corn on sale for $0.33 cents an ear. I was tempted to buy some but only purchased 2 just for my salad. 😆 🤣 😂 I might just go back tomorrow. They had so much left after Memorial Day, so they're trying to get rid of it. Good time to cook some and freeze it. My Momma's fried corn was the absolute best. Leftovers were nonexistent at my house. 8 boys and 2 girls made you get to the table on time!! With the fried corn we had fried chicken and rice and cabbage. Dessert was PEACH COBBLER!! Classic Sunday dinner!! My Mom would always let that corn stick just a little bit. Gave that taste a umph😂 She fried in bacon grease and butter. One question though. How is it that Southern women's fried chicken tasted so good without all the seasonings that are used now? All she used was salt and pepper. Cooking with love has a lot to do with it❤❤

You’re 💯 correct, cream corn and fried corn are two different animals! My mom used corn meal instead of flour. She also put diced peppers and sometimes a tad bit of diced tomato in her fried corn. Her fried corn was slightly savory but definitely not sweet like cream corn.

@@feleciajohnson7697 DADDY GREW UP ON A FARM No. CENTRAL GA (right below Atlanta). 3 living boys and 3 living girls (I think, I'm counting). they all cooked, sewed, farmed. He was my inspiration for southern cooking. Any clue as to what smothered creamed chicken would be? I was very young. May have served it over rice. Not an actual gravey (thick) , more of a sour cream taste but I don't ever remember him buying sour cream for chicken. Just Lipton Onion dip mix on Fridays with fish, lol

Just like cornbread dressing, I only make that just for Thanksgiving and Christmas. It's good that you stay away from foods that are not good for your digestive system. I guess we all cook the way our mom taught us. This is my mom’s way…..always add a small amount of water depending how much corn you have. Because the milk in the corn is not enough to cook the corn without sticking and burning to the pan. My method is cooking on medium high flame stirring frequently. Once it start cooking, adjust to low medium and cover with a lid. Remember to always stir frequently.

@@Pwoo54 Yes, you are so right that we all mostly cook the way we were taught by someone if it be a mother, grandmother, friend or family member. The way I fry my corn has always worked for me and I never had to add any water once I begin to learn how to properly cut, milk, and fry my corn. If one didn't get enough milk from the corn could be that a person didn't properly scrape the corn or it could have been that the corn itself was getting old and lost most of its natural moisture. Also cooking the corn at a low heat and the kind of skillet a person use can also play apart of the corn sticking or burning. I'm very skilled, I seem to think so, 😆 🤣 at frying corn and it comes easy to me. If a person have to use water, then its perfectly fine to use water or any other methods to have the best corn that they can cook. Thank you for sharing the method you use and thanks for tuning in.💖💖💖 Yes, there are so many ways to cook corn and it all is very helpful. No wrong way just a good way to have some delicious corn. My g-ma ✨️ taught me to shuck the corn then get a bunt pan put the cob in the hole and scrape the kernel and milk as well. The bunt pan stays stable as well.😊
