Nice recipe for a brunch crowd. Easy to switch up and make a bacon, sausage, and vegetarian option. Now that they make tortillas in spinach, sun-dried tomato, and cheese one can really mix it up so everyone can creat their own. Cannot eat bacon it's PORK !! I can replace it with broccoli, green pepper turkey bacon , or spinach, onions and other veggies . Thank you I have made these without the tortillas , and I used egg whites.
