run the knife down the entire length of the whetstone not just in one area. you'll deform the whetstone, use two hands to guide it down from the tip to the other edge of the bevel Can't make new comments cuz I bully people, but for context I'm a chef, Japanese and make knives in my free time

You’re supposed to leave the stone soaking in water for 30 minutes and u gotta have steady hands to sharpen the knife from the same angle

Depends on the stone. Some only take a couple mins. Oversoaking stones can be an issue, binders break down, changes the feel of the stone, etc. Soak until the bubbles stop, as a general rule.

I learned that lesson the hard way. Lol. I didn't have anyone to teach me how to do shit and I didn't know about KZfaq yet so I messed up a lot of shit lol. But possibly the most disappointing and discouraging was ruining my whetstones when I left them in water for days at a time lol

@@ZombieJWR mid-range, I'd say. They were Norton brand. 220, 1,000, 4,000 and 8,000. It was no bueno lol. I learned very quickly. Although, in learning that lesson, I did my homework to understand where I'd messed up and take better care of my stones now than anyone I know. Also, and finally lol, I've grown quite particular toward old stones. As old as I can get and those, I've found, are much better not just in price but also the functionality, maintenance, you name it, they perform better I think.

One thing I’d like to point out is that you need to keep it at the same angle throughout every stroke. Also you should run it down the entire whetstone so you don’t have a huge dip in your stone. Hope this helps 😊

Why you guys praising him? With the way he sharpened that knife, he dulled it even more, and is gonna deform the whetstone over time. Run the knife along the whetstone, and sharpen the blade in segments. Don't forget to keep a constant angle and check for a burr on the edge..

Bro, you should soak the stone for 15-20 minutes at least, you should have the same angle while you sharpening it, and if you want a real sharp knife you sharpening it with stones above 4000 grit.

You only need to soak till bubbles stop. Any more is just pointless, it's not going to absorb more water. Some stones only take a couple mins. Oversoaking stones can be an issue too, some have binders that will break down (making the stone crumble), or will make the stone feel gummy and sticky. Grit has very little correlation with sharpness. You can get a knife face shaving sharp with 120 grit.

Looking at your brand new whet stone show that you are new to knife sharpening..first and most important rule to use a whet stone is level the stone..make the sharpening surface as flat as posible..and 1000 grit is not a finishing grit

That is probably a carbon steel knife. Much easier to sharpen on a whetstone. Stainless steel knives require a much courser axe puck to sharpen or diamond stone ☝️

You only use a 400 if you need to put a new profile on the edge. Always start at 1000 and then move up to atleast an 8k stone. And get a better stone than that

use the full length of the stone to run across the full length of the blade every stroke, if you don’t the surface of the knife edge will be uneven and any unevenness will affect sharpness and balance

Quick piece of advice here from someone that’s been sharpening for their job since the 90’s... Go to Murray Carters channel and watch his line introduction videos. He apprenticed knife making in Japan and will lay out ALL the fundamentals you need, step by step in a way that pretty much anyone can understand. It’s a very similar to what I learned years ago. Once you learn about “the burr” and develop the proper muscle memory you will have an “a ha” moment and be able to sharpen pretty much anything.
