The Victorian farmers - Ruth Goodman, Alex Langlands and Peter Ginn - return to the Acton Scott estate in Shropshire to celebrate a traditional Victorian Christmas.
There's an enormous amount of farm work to be done on the estate in the lead-up to the festive season, including the hay harvest, to make food for the animals over winter. Having been thwarted last time by rain, the team anxiously monitor the weather.
Peter travels to the Royal Agricultural Society's annual show with sheep expert Richard Spencer to choose a new ram for the flock; back at the farm, Ruth makes mincemeat for the Christmas mince pies. She also prepares for the hoped-for hay harvest celebration with some essentials - bread and butter.

You're not supposed to back a horse into the cart with the frame (?) on the ground. It's too easy to injure the horse and also to smash the wagon.

And you're right... The shafts should be up, then Clumper backs a step or two, and you lower the shafts over Clumper's shoulders

"I've made you a new (veg) garden in this position" he says. Showing Ruth a micro spot of dirt and stones... I would have pulled his hat down over his ears ! The jerk....😠

I grasped when I saw that he turned Ruth's garden into grass! She worked so very hard on that area 😢 and then had the nerve to present her with a horrible patch of area!

Ruth, an "exo-thermic reaction" gives off heat. "Exo-" means out, and "thermic" means heat. Of course the basin will be hot.

@40:09 How is buttermilk different from ghee? Are they two different names for the same thing?

No, they are not. Buttermilk is the liquid left over from making butter. Ghee is clarified butter, butter that's been melted and the foamy solids removed.

@@patriciagerresheim2500Thank you for clarifying that for me. Do know if there is a chemical diffference beyond one being created by heat and the other by blunt force trauma/

@@donovanmedieval There's a big difference. The cultured buttermilk available in stores is made by adding safe live bacteria, then heating and fermenting it for 12 hours. This gives it a distinctly sour aftertaste. The taste of real buttermilk doesn't have that tang, and many people prefer it.

​@@donovanmedieval Butter and ghee are the lipid phase. Buttermilk is the aqueous phase (squeezed out of the butter once the butter's churned enough to clump together).
