December 2015, Poullaouen (FR): Valérie and Thierry le Gall put on sale their building of breeding hens flesh, activity existing since 1993. Since 2007, they led this activity in parallel with a breeding of dairy cows. But the building does not sell.
At the same time, their eldest daughter, Perrine, 22 years old at the time, just came out of her BTS ACSE (Analysis, Management and Strategy of the Agricultural Company). A training course during which Perrine discovered butcher's calf. And yet: the June 2015 BTS ACSE exam offered a case study on the production of butcher's calf! Sign of destiny or pure coincidence: in short, Perrine is convinced: her professional career will begin with the butcher's calf.
We do not necessarily think about it, but it is sometimes more interesting to refurbish an existing building rather than build new, especially in terms of cost. Thus, 400 000 € were necessary to transform the initial building against 600 000 € for a complete construction. Work began in May 2017 and will be completed by mid-September. On September 26, 2017, the first band was in place.
