we used to grow them my adopted mother made soup with them , i know they can be roasted too but i prefer them as soup because they are not disimular to potato roasted , but as a soup they are really quite a unique taste i really enjoy that flavour , basically fry onion celery , garlic , peeled artichokes in with stock , cook , liquidize , now you can either add cream or cream cheese or just a cheese or you can top it with croutons and bacon , for philip, you can make cheesey croutons for those that can eat them , philips croutons can be a garlic and herb cooking margerine and baked insted of fried , then top with crispy bacon where as for marie just grated cheese , its very versatile, hearty and a unique taste
