The water trick works, although sometimes mine has still turned just slightly brown. But that possibly could be from waiting too long to pour the water over it. What also works it simply sealing the container with aluminum foil. Contrary to what some people believe, you don't have to completely push out the air or have no space of air over the guacamole. Just make sure the container is completely sealed all around the edge and no little holes in the foil, and you'll be golden.

Can it get bad faster because of this? Or because the water protect it from outside bacteria it stays safe?

As long as there isn't bacteria already in your water, it shouldn't go bad any faster than normal. That's assuming of course that you're storing in the fridge at 40 degrees or below. You don't have to use water though. Just make sure the container is completely air tight by using something like aluminum foil that you can seal tightly around the edge instead of using a lid that could possibly let a little air seep in.
