Ingredients:
For the Cake:
2 Large eggs at room temperature
3/4 cup (180g) Milk at room temperature
1/3 cup (75g) Vegetable oil (any flavorless vegetable oil like canola, corn, sunflower)
1/4 cup (60g) Freshly squeezed lemon juice
1 Tbsp Lemon zest
1 1/2 cups (180g) All-purpose flour
3/4 cup (150g) Granulated sugar
2 tsp (8g) Baking powder
1/4 tsp (1g) Salt
For the Lemon Cream Cheese Frosting:
1 cup (226g) Cream cheese at room temperature
1/2 cup (65g) Powdered sugar
2 Tbsp (30g) Freshly squeezed lemon juice

Made this last night. It really was the easiest cake ever! I didn’t have vegetable oil so I subbed it with melted butter. It turned out perfectly. I’m not sure I needed the parchment paper with a glass baking dish and will maybe try greasing next time. Also I found the frosting not sweet enough so I added about double the amount of powdered sugar and lots of lemon zest. Came out really nicely ❤

OMG ! It looks so fluffy and so delicious ! It's an amazing recipe, I liked it a lot, thanks for sharing my friend ! I see that you didn't use the mixer to beat the eggs isn't it necessary to beat them 5 to 8 minutes in order to be creamy ? Congratulations !!!!!!!!!!!!!!!!

Thanks for your comment! You don't need to beat eggs for this recipe. Just stir using a wire whisk until just combined. That's why this cake is so easy. 😊

Mine isn't rising much in the oven I added 2 teaspoons of baking flour into my normal plain flour and it didn't rise much....don't know why🤔

I've never tried using yogurt in this frosting, but I think it might work if you use thick yogurt.
