I *think* that a lot of the crazier hairstyles were partly constructed with pre-built wig pieces. It would be easier to put the actual hair into a coiled braid or bun and add on the more elaborate components than it would be to actually style the hair like that. Also easier to maintain the fancy bits if you can take them off and have a maid keep it clean and fix the styling.
