Michael Buerk is joined by chef Anna Haugh to celebrate food served at royal weddings. Anna is inspired by an Italian lamb dish served at the wedding of Queen Victoria's youngest daughter.
From Elizabeth II to Cleopatra, Real Royalty peels back the curtain to give a glimpse into the lives of some of the most influential families in the world, with new full length documentaries posted every week covering the monarchies of today and all throughout history.

Since I - as well - couldn’t find a recipe, I worked out this, which I made for Easter dinner yesterday for the Lamb. Italian-style Stuffed Crown of Lamb with Salsa Verde Ingr. For Lamb: 3 Racks completely Frenched Salt, pepper For stuffing: Medium onion, chopped fine 4 oz diced Prosciutto 1 oz dried Porcini Mushrooms (reconstituted in lukewarm water or stock) chopped fine 1/2 cup Panko breadcrumbs 1/4 Parmesan cheese, grated Dry red wine Olive oil, salt, pepper. For Salsa Verde: Bunch of Flat leaf Italian parsley 6-8 large size leaves of Basil 6-8 large size leaves of Spearmint 2 cloves garlic 4 anchovies 10 capers 1 Lemon Olive oil Method For lamb: 1. French three racks completely down the bones, removing all fat and silver skin from the meat (as they appear in video) 2. Salt, pepper racks then tie together. Take care that the bones point as straight up as they can go, they should look just like Anna’s in the video. 3. Return to fridge for at least twenty minutes for the shape to hold. (Crown will be flimsy if not done). 4. Preheat oven to 400°F 5. Prepare and add stuffing to the middle of the crown, do not stuff higher than where the meat stops. 6. Place in the oven for 25 minutes or until meat internal temp is 122°F (by the time you cut it will be 125°F or medium rare. 7. Rest crown for at least 15 minutes before slicing. For stuffing: 1. Olive oil in pan medium heat. 2. Sauté onions until soft. 3. Mix in diced prosciutto and sauté until lightly crispy. 4. Stir in reconstituted and chopped Porcini mushrooms. 5. Pour in a few glugs of red wine and reduce heat until almost completely evaporated. (**optional, I needed a richer flavour**) 6. Transfer mix to a bowl and add breadcrumbs and Parmesan cheese until stuffing can be shaped with hands. 7. Pepper to taste (you won’t need salt because of the prosciutto). 8. Add egg yolk to bind. (Anna uses olive oil to bind, but it was easier to prevent too much liquid - add a few squirts of oil after stuffing is in crown). Any remaining stuffing can be baked alongside lamb in aluminium foil. For the salsa verde: 1. Remove the parsley, basil and mint leaves from stems and grind in mortar and pestle until a paste. 2. Transfer to a glass mixing bowl, dice and add anchovies, capers. 3. Stir in 2 cloves of chopped or minced garlic. 4. Zest one lemon, over top then squeeze out juice and mix in. 5. Add olive oil slowly until paste becomes sauce in consistency. 6. Allow to sit at least 20 minutes.

If she's using salsa verde and it was in the original recipe then it's likely the "British " royal family might have visited Spain and Portugal.

Interesting. The Queen's chef has a cookbook "Cooking Royal" and he has the chocolate biscuit cake recipe. He doesn't include fruit or marshmallows. I wonder which one is the one William actually requests? Hum.
