THE GERMAN DISH THAT MUST BE EATEN// Hello everyone, Since we are in lockdown here in England, we thought it might be a good idea to share one of our favourite German recipes that screams comfort food: 'Schales' which is a regional dish in Saarland. It takes a while in the oven but it's so lovely with homemade applesauce. We put the recipes down below in the info box and we hope you enjoy the video. Much love, Kirsten & Joerg x

RECIPE 'SCHALES':
Ingredients
2,5kg baking potatoes
3 shallots
3 eggs
about 5tbsp flour
salt & pepper
olive oil
Method
Peel the potatoes, quarter them and then grate into a big bowl or pan. Grease your pan. Add the shallots, the eggs, the flour and the salt & pepper. Mix everything together and bake in the oven at about 180-200 degrees Celsius for about 2 hours. Turn in between so you get a nice crust.
RECIPE 'APPLE SAUCE':
Ingredients
About 1,5kg apples (Braeburn are perfect)
5tbsp brown sugar
10tbsp water
1 cinnamon stick
1 vanilla pod
Method
Peel the apples and slice into quarters. Put into a saucepan, add the rest of the ingredients. Simmer for about 40 minutes to an hour.
Enjoy!

I really needed to watch you guys today as you two are so calming to watch. I’m in Michigan, USA and was feeling stress and worry of all the craziness here. This brings back MY childhood memories, too! My mother is German American and she would make fried potato pancakes and also serve with homemade applesauce. I'm sure she learned about this recipe from her mother, who of course probably learned it from HER mother. Comfort food for sure

I completely understand how you feel after the Christmas decorations are put away! Takes me a couple of days to get used to it. I often take the opportunity to rearrange furniture and/or artwok in the living areas and that seems to help. Gives spaces a fresh look.

I have quite a few decorations that are just winter - wooden pine trees, snowmen, and snowflakes. I take down the Christmas stuff but leave the winter stuff until mid-February. I find it’s a nice transition.

I love apple butter on toast and cottage cheese too 😋😋😋 My mother’s family were PA Dutch too. I love Sand Tart cookie at Christmas time. 💕

I was born in Nurnberg 62 years ago. I live in the US now and the last time I was there was when I was 19. My mother was German but stopped speaking German to us when I was very young. I love my home town! Is there any way you could visit the Kristkindel Markt when you go back to visit your family? There are other videos on it but they are very old. I love watching your visits to Germany and your German food videos and I do like you speaking German so I can recognize what you say. I have never had this dish but I love potato pancakes and applesauce!

My Mum used to make reibekuchen (I think it's the same as potato pancakes/rösti). Not often because it was a lot of work for something that we considered 'a snack' but that made them all the more desirable. My Mum died in 2017 and I haven't had them since out of fear that they never could be the same again. Your video made me think: the memories will stay and even grow stronger when I ad my own touch to the reibekuchen. And while I'm at it, I can also try to make schaales. 😀

@@KirstenJoerg Ich habe mir in den letzten drei Tagen alle Eure Videos angeschaut. Jetzt werde ich mich mit den gerade aktuellen zufrieden geben müssen. Ich fand alle so wunderbar, entspannend, interessant .... zu 90 % macht das aber auch die Persönlichkeit von Euch beiden aus. Ich glaube, Euren Kanal gefunden zu haben, ist so etwas wie eine große Belohnung nach all den vorausgegangenen und noch andauernden Einschränkungen des Lockdown. Thank you for the recipe. My mouth was watering from the beginning of the video! My mother, who passed a few years ago, loved fried potato pancakes. I believe she added yellow cornmeal and diced onion to leftover mashed potatoes, formed this into “pancakes” with her hands, then fried them in oil in a heavy skillet. This recipe using the yellow cornmeal was surely influenced by her southern heritage. (I am of the opinion that anything made with potatoes is a joy to eat.) Take care, you two. My mother also used to give us Dip butties which where bread dipped in the fat of the bacon....oh how I loved them when I was little....we had our little traditions from my mothers era but we where well fed with homemade food which was lovely....I don't think there where any ready meals in those days but I am so glad there weren't

I make toast, spread with applesauce or apple butter and top with cottage cheese and ground cinnamon. This with hot coffee/1/2 and 1/2 for breakfast. The bread is from Aldi's, sprouted grain.

My mother is from Holland. My father from England. I grew up in East Africa. Now I am married to an American and have two adopted children from Brazil. So I have memories of a lot of strange things that we ate. I was used to having bacon dripping sandwiches when I was growing up. My Mum would save the drippings from the bacon and spread it on our bread like butter. I made my husband one of these sandwiches for his lunch when we were first married and he called from the office and said, “what on earth is this sandwich you gave me?!?! “ LOL I also remember having to sit at the table a long time as a child because I did not want to eat my piece of bread with butter and sliced tomatoes with sugar on top. I had to sit there till I ate it and of course it got more and more soggy!!!!Anyway, I’m glad for all my experiences because there’s not too much that I can’t eat! Thank you so much Kristen and Joerg for sharing your lives with us. It brings me a lot of joy and calmness in a world that is really struggling right now. I also have to say thank you to Jesus because he died for my sins and has given me and the whole world the opportunity to accept his gift of eternal life in heaven with him one day where there will be no more troubles like there is on earth. I pray God‘s blessings on you all🙏🏽♥️

I've made several of the dishes you've prepared here on KZfaq, all to great success with my family. I am really looking forward to making this latest one- though I may need to get a shredder first so I don't have to manually grate all of those potatoes! My mom was German and always made potato pancakes and homemade applesauce when we were kids. We also had it with sour cream and ketchup. So nice to have those fond memories. Thank you for sharing yours.

Ahhhh...mom's potato cakes & applesauce🍎...back home in Indiana!J&K, a best memory for me...in Tegernsee❤ with locals at a brauerei for midmorning beer & weisswurst. Oh and we removed the casing!🍻 Love German food🤗

I'm from Michigan USA...in my area we grow a lot of apples. As as child (and even now) we put home made apple sauce on a buttered slice of bread too!

Love the recipes, flowers, candles and your company. Blood pressure just went down 20 points. Enjoy you two in the kitchen together. I, also; miss the Christmas decor. Everyone should make homemade applesauce.🍎🍏. We put applesauce and peanut butter on regular pancakes. I find your stories of Germany very interesting. Be well.

I grew up in an Irish/German household, so we ate a LOT of potatoes! Potatoes pancakes were my favorite and my mother made homemade applesauce which was so delicious. You brought back memories for me. I wish I knew about the stand in Cologne when we passed through years ago, I would grabbed potato pancakes for the next train ride.

I have Pease ancestors that came to the States in the 1600s from Great Baddow, England! Two were accused of Witchcraft in 1693; Thomas and Goodwife (Goody) Sarah Pease. They very fortunately lived...

@@karinbergman1646 wow, hello cousin! My ancestors also came to the US in about 1640 or so. Wouldn’t that be funny if we were related. I think I’ve read that Pease is a very old Anglo-Saxon name. I’ve done my DNA which showed predominantly British Isles with some German and Scandinavian. I do love history and genealogy.

I find myself smiling when I view your videos. You do a excellent job of filming and the music is always so lovely You two are adorable and I enjoy listening to your calm voices. I am gluten free and really appreciate all your recipes. I also love traveling and want to thank you for giving me so many good ideas to where to travel when it’s safe to do so.

How lovely to see you enjoying your comfort food. You made me hungry! I’m glad that you have good memories from your childhood. I am heading to Michigan in a few months to visit my 95 and 92 year old parents. Whenever I visit I fill their freezer with meals, and also many many jars of applesauce which my dad especially loves. I must admit my house doesn't seem as cosy since I took the decorations down. I love the way you do everything together. So endearing. Have you got favourite German dessert? Oh that's a hard one because we must admit that we don't really cook typically German so don't think we have a fave German dessert but the cakes in Germany are so good (just take Schwarzwälder Kirschtorte).

My German American hubby of 41 years loves potato pancakes ... his mom always made them and they were always fried... served with applesauce and sour cream. The first time she served them, I thought they were amazing, but so much work. I think he'd like the Schales recipe. Going to give it a try, thanks. I love your German recipes. 🇩🇪 Last summer I spent my holidays in the Black Forest and I ate some specialities: Maultaschen, the famous Schinken but also Schwarzwaldkirschetorte. I love also Kartoffelsalad.You are a nice couple and I really like your channel. It relaxes me hearing to you. Have you ever been to Italy? If yes, what did you like the most?

Joerg - the potato pancake stand in Cologne by the Hauptbahnhof!!! Yes! Those were my first German potato pancakes. It was 1985 and I was traveling with my aunt. She discovered it. Now to make this recipe for Schales. Thank you both. I'm from Southern California, love traveling in Germany (especially to Christmas Markets) and still have family in the UK Midlands, so I really appreciate your videos!
