Over 4 thousand pies filled with custards, fruit, or whipped cream were created for the fight which took five days to film! The total cost for the pies was $18 thousand, and the scene itself cost $200 thousand. The key for the gag was having Tony Curtis’ character remain pristine until the right moment, when he got a pie right in the kisser. As a result, Curtis had to keep changing into a set of clean clothes when he accidently got hit. Along with wardrobe changes, the fight also required the makeup department to be meticulous in copying the actors’ “pie damage,” and they used photographs to make sure that the continuity matched for the next day’s shoot. While the fight was fun in the beginning, towards the end everyone was a little pied out. Wood choked on a pie that hit her in the mouth, and Jack Lemmon allegedly got injured. He said, “I actually got knocked out a couple of times. Unless it’s thrown just right, a pie hitting you in the face feels like 10 tons of cement.” Lest Blake Edwards miss out on the fun, when he called “Cut” for the final time, the cast and crew aimed pies at the director.

I read somewhere that, although having Leslie walk untouched through the chaos was very funny and well within his character, it came about due to an accident of sorts. The production spent some time shooting exteriors in Europe, including the bit where everybody hustles out of the bakery to the cars. It seems that just before cameras rolled on that scene, Tony Curtis was taking a bathroom break. When he got into position and cameras were about to roll, he realized that he was clean, and so he smeared pie onto his face, which was all he had time for. Somehow, no one noticed the difference between Curtis and the other performers until the footage got to the States for development and review. By that time, there was no time or (presumably) money to go all the way back to Europe for reshoots, so Blake Edwards and/or some others on the production team rewrote the pie fight to show how Leslie winds up with pie only on his face. Goodness knows what they would have done if some other actor had raced out of the bakery with pie on the face only - having someone else wander through the pie fight untouched wouldn't have made anywhere near as much sense.

This is probably one of the greatest pie fights in cinema history. The idea of Jack Lemmon playing two parts and Peter Falk being willing to take I don't know how many pie bombs just makes it amazing. Of course I had a little bit of wicked Glee when Tony Curtis finally got hit in the face, but of course he had to get hit with a white cream pie. Lol and poor Natalie Wood, putting her hand over her mouth as if she has sinned. Too many Splendid moments to name, but I'm watching this today during the quarantine and I actually find myself smiling.

A lot of the actors felt genuine pain because a lot of the pies weren’t just mushy cream. Some we’re more like cakes or pound cake in how they were made so getting hit by one was akin to being hit by a rock or brick.

I love it that Tony Curtis stayed clean until the very end they don't make these fun movies when big names get together to do a car race I think the last one was the Cannonball films and The pie fight scene lasts four minutes and was shot in five days. It is the longest pie fight sequence in movie history. At first, the cast had fun filming the pie fight scene, but eventually the process grew wearisome and dangerous. Natalie Wood choked briefly on a pie which hit her open mouth. Jack Lemmon got knocked out a few times: "a pie hitting you in the face feels like a ton of cement". At the end of shooting the fight, when Blake Edwards called "Cut!" he was barraged with several hundred pies that members of the cast had hidden, waiting for the moment

The story goes that the film crew shot on a Friday and took a weekend break. The weather was unseasonably warm and the crew returned Monday discovering the half-tossed pie set grew rancid and disgusting. They had to finish shooting under austere and nasty smelling conditions.

I heard that Jack Lemmon was knocked out two times while filming this scene. One of the actors, or extras, wanted to really nail him with a pie and loaded as much pie and cake mess as they could onto a pan....which is like getting hit with a pound of wet cement.

One of my favorite scenes in one of my favorite movies. When I was in the MFA program at UNLV, Tony Curtis visited and we had a Q&A with him. I asked him what memories he had of his time filming The Great Race. I don't know if what he said was true or if he was embellishing, but this came straight from him: my recollection is that he said they filmed the scene following the pie fight where they have exited the bakery in Austria, I believe (somewhere in Europe, I do remember that), and they filmed that first before the shot the interior pie fight scene several weeks later. If I recall correctly, Curtis said the exterior shot was not shot by Blake Edwards but by a second unit assistant director. The cast members had been instructed to be covered with pies to reflect the pie fight that had just occurred in the script. Tony Curtis, not wanting to be covered in pies, simply put some on his face, and the scene was shot. When Blake Edwards realized that Tony Curtis had not covered himself entirely, it was too late for the exterior scene to be shot, and when the interior scene was shot some time later, the conceit was that The Great Leslie wouldn't get hit by a pie until the very end of the scene. Curtis said the trouble was that even though everyone was directed not to hit him with a pie, it was impossible not to be accidentally hit or be hit by fragments of another pie hitting a different target. This meant the shooting was stopped several times so Curtis could continually change his clothes. He said that ended up being more bothersome than if he had just covered himself in pies for the exterior shot in the first place. But he said it made for a funnier situation in the end. I believe he said they spent five days shooting the pie fight, and he said it got to be tiring pretty quickly, especially for him because of all the costume changing and trying to avoid getting hit. Even when he told the story, I had a hard time believing Leslie not getting hit with a pie until the end hadn't been in the original vision of Blake Edwards from the beginning or that the assistant director wouldn't have made Curtis get covered in pies like all his cast mates, but that was the story he told, and he, of course, was there, so I assume he wasn't lying or misremembering. If it is true, I guess the ensuing final product of that particular scene was a happy accident.
