I bought a few bottles of both the Perle de Vigne and the Perle d'Aurore, based upon your descriptions in this video, for my family's Christmas and New Year celebrations this year. We don’t give other sparkling wines the credit they deserve. Those producers work hard to deliver high quality wines.

Which one is the best for the traditional kir royale?

Probably Chardonnay because it's more subtle and more acidic. Although, since you're adding a lot of sugar and flavors with the crème de cassis, it's not going to make a huge difference as long as you're going for a crisp and not too oaky or powerful Champagne. Not that Kir Royal is with Champagne. If it's another type of sparkling, it's just a Kir, not Royale. Enjoy 🥂
