Guga have done an experiment a while back, he dry aged a choice grade brisket and it ended up super juicy. My theory is that the only reason why it was that juicy, is because he rested it for hours and hours, which made the brisket re-absorb all of the juices that came out. You might be able to achieve an even juicier brisket with this cut. Just imagine the odds of Nick seeing this comment.
