I like the idea of making a large round disc and then dividing it up. Once I tried making scones and forming each one individually. What a disaster. I am going to try this.

Well, I did make these scones just like you showed, cutting them into 8ths. However, when I tried transferring them to the silicone matt, they turned into globs. I reshaped them into scone shape, but during baking, they really spread out. They do taste delicious and I will make these again, but I am thinking of investing in a scone baking tray. I am at 2+ miles altitude, so that may be a factor.

I have made scones before where you cut the disc into the sections but then leave it together to bake. Or just slightly separate them Being close together is supposed to help them rise. Do you know if almond paste (aka marzipan) is available without sugar? That would make an awesome addition to the center of the scones.
