This is the most incredible Grenadian Oildown on EARTH! We're in Grenada today with Chef Carlos, cooking up his country's nation dish. Breadfruit, callaloo, saltfish, pork, simmered in a turmeric coconut milk, this delicious meal is a national hit for a reason..it tastes INSANE! We also take a tour of Carlos' organic farm, with chickens, ducks, turkeys and even rabbits. Thanks to Kitaka, Ninqui and Rhion for helping me get this video lined up! We are one people all around the world. Cooking styles may have been influenced by forced colonization and human distriution but what I realize is that every cultural Afro-Centric dish carries the same seasonings in the same manner presented in varied names, styles, and expressions. Across the board every Afro-Centric culture's famed dish, from the USA through the Caribbean to Africa, includes the beloved peppers, garlic, okra, and thyme, and preparation music or song as a must. If no music then mom or grandma is humming.

Amazing how green Grenada is, so many plants and spices and vegatables just grow in the rich volcanic soil, it so black and rich for plants to grow.

I thought one of those ducks might have been a Caribbean pigeon. The greatest evolution of the American pigeon in my opinion. They have evolved “bug eyed”. The best pigeon I’ve ever seen. Constantly looks completely distraught but i think its evolutionary tactic has been to look as deer in the headlights as possible in order to make people laugh and leave them alone.

OIl down is one of those no reward without labour dishes. Lazy people can't cook this. If you guys only saw the amount of work it took for the preparation of all those items. But when the meal is finished its so worth it.

Australia has alot of rabbits because they are a pest with not enough predators. Unfortunatly they are not eaten often and any you find in the wild have a high chance of being full of cancerous legions because of the pesticides used on them

Tainos were the original people of Jamaica before the Transatlantic Slave Trade brought Africans to the new world. SOME Maroons hunted runaway Slaves for Plantation owners. Maroons were also bright to Canada as police officers.

Soup? No my friend this isn't a soup. If its a soup it simply means you overdid it with the milk. The liquid is supposed to boil down to basically some sauce. So if you're taking out a plate and you want some sauce, you should get some sauce at the bottom of the pot.

Guyanese people call it golden apple too. Jamaicans call it June plum. I would love to visit this farm and meet this chef and learn from him.This oil down is very similar to Guyanese metemgee.

My father was Grenadian and he would cook these exotic meals every Friday at home. From fish broths to lambe , lobster and the like. The neighbors would line up with their bowls to get a taste. I got the craving for spicy flavors from him and now I introduce them in my dishes, really tantalizing!

Hi Chef Carlos, your dish looks amazing. Real authentic thing there man. I've learned a thing or two. About the layering I see you don't mix up everything loke i do.. All the veggies stay whole whereas I tend to cut up everything . Thanks for sharing. I'm sure the taste was amazing.
