Got to say guys - this format is a winner. So much theory & practical info in one video. - You help us by summarising the 3 main mistakes people make with a dish - normals cooking on their own with no interruptions from chefs (to show real life) - then pro chef doing & explaining it step-by-step, with each normal helping - then a recap re the mistakes & tips - then a leftovers recipe Just LOVE this approach in addition to the other video concepts. It’s like Ben’s ‘like a chef’ short fri videos, but with you all. Can’t wait for the next one...

Wow, Karan broke it down so well. I am Sri Lankan but learnt to cook mostly on my own. The step of "cook till the oil seperates"? That took me several years to understand. In the beginning I used to stop the process too early and later on ended up using too little oil. I am a little envious that this "hard earned" knowledge was dropped in within two sentences,😆 So very well done.

I assume the main mistake is just using that one old curry powder in your cupboard for every curry instead of roasting and grinding different mixes of spices yourself?
@SortedFood
@SortedFood 2 жыл бұрын
Or you can buy the pre mixed spice blends. If you like using the same powder each time, then that's fine, but if you want to experiment a bit, then pre blended or mixing your own is a great way to do so.

Its not a mistake per se. As someone who eats curry multiple times a day and has cooked it multiple times... I can tell you that you can do both. My mother makes a paste of ginger, onion and garlic and puts it in the freezer, using different amounts of it in different curries. If you have the basic blended spices.. red chilli, turmeric, cardamom, coriander etc. You can just use different amounts of it and have good results. Yes, if you blend it yourself it will affect the taste and it'll taste really good too but it takes quite a bit of effort. My mother blends cardamom and cinnamon into a powder rather than buying the powder versions because she prefers the taste of that. Tldr, you can do both and be fine
@rims169
@rims169 2 жыл бұрын
Indian here. You just need one good mix of spices. My mom does one load of spice paste to be used for a week at one time. It has garlic, turmeric, red chili, cumin and coriander with a little water and keeps it in the fridge. She uses this mix for most things she makes during the week. Occasionally she will add some ginger but everything tastes different. I would recommend buy several packets of kitchen king spice mix and keep it.

I didn't. Prefer James or just them 4 - they should just hire another dude. The fact that he let the curry beside him get burnt for so long is a slight on his character, he is just unaware of it and not tactful. The problem with the 'guest' chefs and what I hate about daytime viewing is that nobody actually criticizes the dishes to make them better, it's shit and boring, at least Barry tried. Fair play, Baz. It's my opinion folks, no need to send me to oblivion.
@jordanollivier9939
@jordanollivier9939 2 жыл бұрын
@@dizzydazed8055 The whole premise of this episode was showing the boys how they could have done better though? Is that not the perfect constructive criticism? Karan was also great in front of the camera, super informative, and his humour meshed well with the usual cast. I'm aware that it's just your opinion, but I'm baffled as to how you came to such a strangely vacuous opinion.
@dizzydazed8055
@dizzydazed8055 2 жыл бұрын
@@jordanollivier9939 @Jordan Ollivier it's not vacuous. When you watch someone sit about and kiss roses over their own technique whilst watching a pan burn and then see the boys lick sweet his lassi juices without ribbing or acknowledging the actual advantages and disadvantages between the two dishes. It sucks. Proper cooking is lost on these 'guest' chefs and just a glorified ad for their persona. You could see Mike grimace when Barry was talking when tasting the two dishes side by side and then he was like 'THAT'S FANTASTIC'. It's boring. I'm just commenting on these guests chefs after that disastrous Mr. Roger. These guys were supposed to be honest, not a daytime tv suck off.

The most common mistake I see people make with curry is following a recipe from India when what they really want to make is British Indian curry. They are completely different cuisines. Curry is such a beautiful in-depth meal that I, much like most people, don’t really appreciate. The Tikka Masala was created in the UK, but the stereotype is that curry is Indian, but what I think we can all agree on is that india have developed curry as a dish and it’s great seeing an expert like Karan provide an insight into his expertise of such a beautiful dish cooked from scratch. Curry is a great midweek meal after work with the sauce out of a jar, mushrooms and chicken cooked off while rice bubbles away and there’s a lovely dinner in 20 minutes with a lovely garlic naan, but curry is such a fine art that is unappreciated to all us normals, going to an Indian restaurant is great for experimenting but knowing how recipes differ so that the same dish will differ between restaurants doesn’t allow us to truly appreciate the depth of curry. Such a fantastic and intriguing dish, and it’s no surprise that yet again the uk has created something and the idea has been improved drastically elsewhere, and we’ve stolen that work and enjoy it for ourself 😂😂 we’re good as a nation at engineering, but most of us drive foreign cars with Ford being the only notable English car company, most technology coming from China and Malaysia, with the innovation coming from the us, we steal everything and benefit from everyone else’s work 😂😂 we are the literal definition of a free rider in economic terms, we don’t put anything towards the end product but enjoy the full benefit of the end product, the uk are the bad guys of the world we’re just lucky we pretend to be the police of the world, it’s like spurs pretending to be a big club, its an ongoing facade that most of us aren’t really sure how we managed to make it happen but everyone has been bamboozled by it for long enough, but we’ll be found out soon enough I can see the headlines already, Japan recalls all vehicles and refuses to export others to uk because of controversial prime minister, no more Kia, no more Toyota 😂😂 roads would be empty, would be warfare between the crazy Audi drivers and the insane bmw motorists 😂😂

This was super cool to see the small differences between just techniques between a couple items like the spices and the veg can make in an end result. I'm definitely going to use some of these techniques for some curries. I always love the Friday episodes because they are usually so much more informative with cooking techniques and concepts.

Been looking forward to this episode since you all teased it. Great to see the tips shared, very similar to what my aunties and grandmother taught me growing up, and the technique with the roti and paratha brought back memories of learning how to do that as a child. Can't wait to see what the boys highlight in their chef skills battle!
