Lud actually made a mistake, when you dine at Michelin stared restaurants most of the time the tip is already included in the price of the set menu. You would only give an extra tip if you were very satisfied with the service. If a waiter told me something as simple as ordering a set menu and ala carte is not possible I would not be impressed.
