I've made this about 10 times. Tonight I made 20 lbs for my family get together coming up. I just want my family to have a wonderful meal. Thank you so very much for sharing your recipe. Mine are in the oven- I had to up the ingredients a bit- I had 6# of boneless ribs, so it took me two runs through the cast iron enamel pot to get them all seared. But the sauce was really good (I sampled it prior to putting them in the oven). I'm confident they'll be awesome. Our party is in two days and I'm cooking these ahead of time, so I'm hoping they reheat well. Experience tells me that letting them sit in the fridge in that sauce for a day or two before I reheat them, will only make them taste better. Fingers crossed.

Combining the recipe with some bits from Adam Ragusea's pot roast video tomorrow. He uses a large chuck roast, while I'm using the boneless short ribs, so to eyeball the measurements I'm using your video as a reference guide. Gonna add some celery plus a couple extra spices as per Ragusea's guide, substituting the red wine for extra stock + crushed tomatoes to make extra sauce. Plus I'm going to add the carrots towards the end as per Ragusea's guide so they can be eaten as well.

I followed directions pretty well, but I think I added too much broth and wine, it did not render down like that but I used a Pyrex dish and foil. Still came out great tho, was not expecting such a strong wine taste. (no I didn’t go overboard) not a wine drinker so took a couple ribs before I appreciated the favor pairing. The fam was impressed, thank you.

Well done.. I do mine more texas style with a dry rub and heavy sear but then i put it in foil with mushrooms and shallot and garlic.. Two hours? Let her rip son. I make my braise with bbq sauce badabing.. Thats the beauty of cookin.

That looks amazing Chef Faro! I have thinly sliced short ribs would I follow the same time of two hours to cook them in the oven or less? Also, I have chardonnay right now but no red wine, would that work as a substitute?

Leah Veal Hello and thank you for the kind words. With a thinner cut it can cook in 1.5 hours, but there is no problem with cooking it for the 2 hour period. It will come out super tender. And... Yes... you can use Chardonnay to braise the Short Rib

The best part is the left overs are very flexible… you can shred up the meat and eat it in a sandwich/sub. But, if you still wanted to eat it in a similar fashion I would cook it over low heat on the stove top and ensure you add the sauce. If you see the sauce thickening up, add a little bit of water.

@chef faro I just picked up the most marbled piece of short ribs you’ve ever seen. Literally look like Wagyu or Kobe “my grocery store actually has a great meat department and they do sell Wagyu” and I’m thinking maybe they mislabeled it ! Anyways, I’m going to prepare the boneless beef ribs tonight and follow this recipe to a T. I VERY EXCITE ! Can I use truffled salt to marinate or regular kosher sea salt ok ? Lastly, my wife hates onions, any recommend if I can substitute with something else or would that kill it ? Thank you for the recipe !

A Real Gem I’m so happy you purchased a beautiful cut of meat and are going to braise the short ribs!!! Short ribs if cooked right at home turn out just as good as the finest steakhouses in the world. To answer your question: Truffle Salt or Regular Kosher Salt(what I used) both work. Onions add an incredible flavor plus the caramelization leads to more flavor as you braise the meat. You can always strain the sauce so no onions come on the final dish. As you eat the short ribs you will not have an overwhelming onion flavor at all. If not... use carrots, garlic, potatoes and celery to help beside. But... I’m a big believer in the importance of the onions.

What about using 1/2 bottle of Guinness instead of red wine? By the way , the bag is a brilliant way of preparing the potatoes.

ejhickey yes, you absolutely can use Guinness or your favorite beer. Just ensure you turn up the heat and bring it to a boil; so the alcohol renders away! Enjoy. Let me know how it turns out

I was surprised that you didn't add some portabela mushrooms for even more beefy flavor and that you didn't lift the fond off of the bottom of the pot with either the beef broth or the wine.

Patman Crowley Patman Crowley Mushrooms are a delicious add on as well! I love garlic onions and carrots as my main 3 in the braising process. I did de-glaze the fond off when I added the tomato paste and broth! It turned out so tender.

You can use non alcoholic wine, but if you’re trying to avoid all of that- you can use beef broth, ketchup (remember it’s sweet so not too much) or fresh or canned tomatoes/diced.

It’s a boneless short rib. You can also make this recipe with a bone-in short rib as well. Just ensure it’s a thick price of meat at least 2inches or more
