Here's my theory, Wizzo the wizard made two identical bird puppets to switch appearances with whoever held them. Nothing but I mean if you know the gender it sounds more natural to say "he". It almost sounds wrong to say "they" because if you can tell the gender of everyone in the video a person would automatically assume you'd mean the plural. Which is why I personally read your comment twice.
