The star removes any drag from the ground as well as making you inmune to everything and gives you a slight speed boost. Meaning every surface is kinda like ice because no ground resistance is there. Spamming the golden mushroom you have a lot of speed but you are still getting the ground resistance. And depending on the kart build, the ground resistance will vary.
