I think when Jack saw Dr. Finklestein’s wife, she reminded him about Sally.

In the version heard in the movie, it's a different vocal track and I don't think it's Catherine O'Hara. The movie's vocals sound more like a professional singer. Probably just to make the final moments of song as perfect as they could.
