I'm literally drooling. That pork belly taco looked delicious and the yam and queso even more!!! Why do I watch this at 3am and die of hunger?! The chef seems so lovely! Congrats on her perseverance and outlook on her business/community!

When I lived in Oakland I would go here basically every week to eat these tacos. Today, I searched for "pork belly taco recipes" because now that I don't live there, I wanted to make some pork belly tacos and pretend I was back Oakland at Cosecha. And what was the first result on youtube? I saw the title and I KNEW IT WAS THIS PLACE.

Worked for and in the company of Daniel Boulud and Alice Waters. Yup. Chef Dominica probably knows a thing or two. Really enjoyed this episode...great commentary and excellent looking food. 👍

Thank you for saying "Griddle." So many folks these days just call it . The flat top. Nothing could more incorrect. A flat top is used for pans, stock pots anything used for a heat source. A griddle is used as a surface which is actually in contact with food.

You can pretty much use anything, such as including beer and stock. To me it looks like she's using an adobo similar to Al Pastor.

Achiote paste with garlic,onion and some citrus like orange or lime juice even white vinegar .rub the pork and add beer sliced onions and beer. That recipe that she is using looks like cochinita pibil marinade with some adds from her. 😀

In my opinion, pork belly far surpasses even the best cut of steak when it comes to texture and flavor. If I knew that I was going to die tomorrow, I would definitely include, in my last meal, a big slab of pork belly.

I was lovin the video until she made that comment. Kind of difficult to take it out of context. Pretty straight forward....she can keep the cultural exchange and support with the help of everyone....not by eliminated some. Sad.

The issue is gentrification and displacement. This is the context. They give the example of San Francisco, where a lot of longtime, local residents were priced out of their own communities, especially after the tech boom. Many people first placed out are people of color since, unfortunately, wealth in the US is not entirely extricated from your ethnic heritage and how that is seen. In the case of Oakland, it has a population that is largely non white, if I recall correctly, and it didn't always have the best reputation or access to resources. But people are worried that once this becomes prime real estate, we will see people of color being priced out again and an influx of more well to do yuppies, usually white . This really isn't as simple as you are making it out to be and it eliminates so much context. It is really frustrating when people think "oh we can all preserve this heritage" in an old school hippy way when that is simply not how it has always worked in reality. Gentrification of food is a thing. Gentrification of traditional crafts and goods is a thing as all people are saying is that we have to guarantee that the people who are native to these cultures have their say and their share of the profits.

@@robinmccowen6671 she is not saying non- brown people cannot help in keeping these cultures and cuisines alive. They can obviously come and eat there. She probably isn't against non-brown people working with her as long as they really immerse themselves in these traditions and goals and don't decrease the involvement of local Chicano for example. She just doesn't want the latter to suffer in terms of having their influence lessened. This is a gross oversimplification.
