5 hours at 325°? That pork isn’t 145°, it’s more like 205°, which it would have to be to shred like that. 145° is still firm meat.

Came here to say the same. Not to mention its wrapped. For how small the shoulder is this would've taken 2-2 1/2 hours tops at 325.

I love following your channel. Always love your method of cooking. I make this pork all of the time for gatherings, and will be doing mine in the oven tomorrow instead of my crockpot :) Keep doing what you do Sam!

You have forgotten the Tara leaves, or Banana leafs, or Bamboo leafs, they add Tons of flavors, and if you used Tara leaf you can eat them it's like version of Hawain spinach 😉

Looking for a simple Kalua pork recipe. I think I found one. Instead of in the oven I’ll be smoking the pork shoulder in a Traeger grill. Saw another utube vid wrapped in banana leaves and foil after the initial smoking. Thx for this.

I was thinking the same, wrapping it banana leaves and then tin foil. Does the banana leaves give it more flavor as it’s cooking?

It is called Boston butt because during colonial days less prized parts of the pig- in this case the ‘butt” end of the shoulder was packed and shipped off to other places. The containers they were shipped in were called butts. Whether that was due to what was in them or just what they called…who knows- the chicken and the egg. Anyway, you would typically want the bone in for this venture as a traditional Kailua pig would be the entire pig, head and all. Smoked, wrapped and buried. I doubt they used thermometers back in the day but generally when the correct color is achieved the temperature is about 165°. That is when you would wrap in banana leaves and bury in the ground until it reaches at least 210°. I’m not sure exactly what that time is. probably depends on the size of the pig. but I’m sure that through tradition successes and failures they dialed in a pretty good idea of how long that would take.

Being Italian, (we would make jokes that Italians are basically Jews with better food, although being an avid fan of your channel, that seems to not be the case 😹) and losing my dad years ago.. you remind me so much of my dad. Your channel brings me joy, plus love your recipes!

Sorry Sam but no way in Hell is this “perfect”. Maybe if you live in Georgia and want to cheat on ingredients and cooking time like they do with their voting. Banana leaves or taro leaves (or both) are a must ingredient. They steam and infuse the pork with a flavor that cannot be found in a jar. Dump the tinfoil for banana leaves that come off a patio banana tree or frozen at Asian Market. Taro leaves are hard to find. Uwajimaya flies ti, banana, and taro leaves fresh from the mainland on Fridays. Taro leaves you eat. They breakdown like collard greens eh maybe more like mustard green. They go first wrap. I heard spinach leaves will work too. Then to hold it together banana leaves and put on the grill or a wrought iron Dutch oven in the oven or aluminum foil like you did.

That does look freaking good! But that's not kalua pork. You made pulled pork with liquid smoke. Kalua pork is steamed. Alae salt is a waste for kalua pig too expensive, straight up ocean rock salt is enough.
