I would use Dex & an android remote desktop app (plus a VPN like Zerotier one, to tap into my LAN remotely) to run my windows destop on these with a keyboard & mouse for a super portable work experience!!!!

If you run a vs code server you could even have a proper text editor/ ide to build your projects. I'd probably opt for a large fold up Bluetooth keyboard and small mouse like the Microsoft arc touch.
