The key trick is to use Butter Milk! Per Canadian Pacific Railways Chef from the 1960’s when they use to have Dining Cars.

Just admitting use of half & half or buttermilk as part of wet ingredients is helpful. Commercial grade equipment also plays a role.🎉

Agreed. When you eat at a restaurant, you’re eating a lot of butter. Butter is the key ingredient restaurants use to make things taste richer. And cream. Chef Robert Irvine would add “a touch of cream for richness” when making sauces and such.

Making them at home from scratch is far superior to what you get in a restaurant. Also I get real maple syrup at home not what they try to call real maple syrup in most restaurants.

These diners are using the cheapest ingredients and methods to make their pancakes, so people just want to know what they’re using and how to make them at home. I’m sure they’re using the half and half instead of water or milk- but to say they’re using fresh eggs and fresh real buttermilk is just a lie. Employees don’t even make the batter, they just wet it with measurements from corporate. It’s a simple mix, half and half or a cream base, and a hot, greased griddle.

Plain flour for crepes, self raing for pikelets. Eggs, fresh frm chook. Fresh milk. Can add a small amount of sugar. Best dressed with a spoon of sugar and a drizzle of freshly squeezed lemon juice.

Lemon/sugar sounds amazing, I'll have to try that! I normally just go with (real) maple syrup for plain jane style, or I make a quick blueberry/cherry compote to throw on top.

Yeah, I like having pancakes for snacks. Prepare the mix and water. Wait 2 minutes. Then, put it in the microwave. After micro, cover the top with margarine and sugar-free syrup. And then, enjoy it while watching KZfaq on my Office Depot glass computer desk. : - )
