Here is how to correctly use the Cutco Sharpener:
1. Place the Sharpener on a sturdy, flat surface. Holding the knife in one hand, firmly grip the handle of the sharpener with the other hand.
2. Place the heel of the blade in the center of the Sharpener so it’s resting in the v-shaped sharpening inserts.
3. Keep the knife perpendicular to the top of the Sharpener and slightly angle the tip of the knife down. Apply light pressure and pull the blade slowly toward you following the contour of the blade. Pull the knife all the way through the inserts to the tip of the knife. Repeat for 5 to 7 strokes.
4. Using very light pressure, repeat this action for 2 additional strokes to further refine the edge.
After sharpening:
- Carefully hand wash and dry the knife.
- Use a damp paper towel to clean any steel filings from the work surface.
Note: the Sharpener is not water tight and should not be placed in the dishwasher.

Why doesn't Cutco make, or suggest the use of, a butcher's steel or ceramic rod to tune up the edge of a straight blade?

Great question! Simply put, Cutco is designed to be a high quality value buy for home cook, not chefs. The pre-angled carbide stones keep the sharpening process much simpler and safer👍

@@kitchenguyluke3559 I get the fact that they're marketed to home cooks, but you recommend once a month or every couple of months. That sharpener is carbide, and removes too much steel. Four times a year is even too much. It should be used ONLY in rare situations where you have a chip in the blade. Diamond rods at a 15 degree angle would do the same thing better, and not destroy the blade. Ceramic rods would then finish the process. Models from A.G. Russell or Idahone are excellent examples. They are what I use on my knives, including my Cutco's, and they are razor sharp. The majority of home cooks should not have a carbide sharpener, as they use it too often. Cutco should develop an alternative. This sharpener does more to destroy blades, rather than "sharpen" them.

tips on sharpening the butcher knife? getting enough resistance at the very tip seems to be an issue for me

Great question Kate! Extra curvy straight edges like the Butcher Knife & Bird's Beak can be a challenge. One mistake I see too often is too much pressure applied while dragging the straight edges through the Cutco Sharpener. Even on tough to sharpen edges, medium to light pressure is always best for the blades and safest for you. One helpful tip when sharpening the butcher knife is to lift your elbow and wrist as you get closer to the tip verse just dragging blade straight back through sharpening like you would on a French Chef Knife. This upward motion of the elbow/wrist allows that Butcher tip to fully utilize the angle of the sharpener's carbide stones. I hope this helps... AND, if it did not, I recommend shipping in for factory sharpening (part of the guarantee)

This sharpener specifically sharpens the straight edge knives like the choppers, butcher knife, boning knife, and paring knives. The serrated edges tend to last significantly longer than the straight edges and can be sharpened for free at the factory forever. Let me know if you would like the info to send your Cutco to the factory to be refurbished

@@kitchenguyluke3559 I'd rather sharpen my Cutco at home because it would be a major inconvenience to be without them for the time it takes to send them in to be sharpened. The local sharpener guy doesn't do Cutco. But they are seriously dull because I have never sent them in (for this reason). Maybe it's like owning a Jaguar; you have to own 2, one to drive while the other is in the shop.

@@julietardos5044 most of my clients like sending in half their set at a time or send them in while on vacation. The great news is that they come back Crazy Sharp! And you really only need to send in every 5-10 years😉

Oh goodness, I'm not a fan of Cutco but if I spent good money on cutlery I wouldn't use this sharpener. The carbide will shave years off the life of that blade. Never use carbide for sharpening. There are many many other options out there and they are all easy to learn. But don't use this.
