So he bent a thin piece into a weird shape then discarded it. Reached over for a ridiculously thick shell already in a jig and rolled it away?

Nah, watch it again. I think he's using the thin piece as a 'slip-mat' to slide the shell into the mold underneath. You can see him push the wood through it, it will be pretty flexible and easy to bend
