One, as someone in recovery it's really nice to see your episodes of Drinking History that aren't about alcohol. Two, your apprehension and imperfection in technique make this extremely endearing and relatable. I hate those squeezers, they don't do a good job and they are made of cast metal. I've broken one or two in my time. If you can't get ahold of a good juicer with a press like the old Tupperware one I have, those fancy looking glass ones that look like an ash tray with a huge nipple are good too, you just have to filter the seeds and pull or just flick the seeds if you want to use the pulp. Then squeezers have not got that option.

I always have to consciously remember that you put it in upside down so that it'll be turned inside out to get out more juice. It's never automatic no matter how many times I do it, but that trick helps A lot. It's a similar kind of trick to how i learned left and right as a kid - I've been playing the piano since before I can remember, so my left hand was the one that played the lower notes, rather than the lower notes being the ones on the left-hand sife of the keyboard.

The fact instant lemonade was created so many centuries ago is so amazing. I always thought "Pink Lemonade" was made from lemons and red grapefruit. My family had lots of carport sales when we were little, and me and sis used to sell lemonade to the customers. Our best seller was one pack KoolAid Lemonade + one pack Black Cherry Koolaid. Fruity lemonades are no big deal now, but back in the early 70's, it was pretty innovative!

To turbocharge your lemonade, make use of a technique called oleo saccharum - zest the lemon, cover the zest with sugar, and let sit for up to 24h. It draws out all the essential oils from the zest into the sugar, and if you use that sugar you get all the citrussy goodness into your drink with it. Also very nice for Sirups or Cordials. It was originally used in Punch to hold up to all the navy-strength booze that also went into it - and there's an episode idea for you, I guess.

I use a recipe from the US civil war. Lemons are sliced thin. You put a double layer of sliced in a heavy, flat bottomed pan. Add a sprinkle of sugar. Use a potato masher and mash. Add additional layers, sugaring between the layers. The amount of sugar depends on how many lemons used. I have a lemon tree, so I use about 25 smallish lemons. You then strain the whole mess, pressing. You have a lemon syrup. Taste, add sugar if needed. Fill glass with ice, water and add lemon syrup to taste. It is really the best lemonade ever...just a lot of work.

The story of pink lemonade that I heard as a kid here in the South (northern panhandle of Florida) was told to me by my grandmother who said her grandmother told her. In Florida lemons and citrus grows very well as most know but during the civil war and its blockade of the south, sugar was hard to get. Most used alternatives like honey for their tea and drinks. Honey alone wasn't enough to sweeten lemonade without changing it's taste and making it rather dull and thick so they started experimenting with some honey with different native berry varieties like mulberry, blackberry, or strawberry. Red mulberry tasted the best and gave it a light pink color.... and pink lemonade became a staple. It kind of died out for a while after the civil war and as sugar became available again, but slowly made a come back when people in the area realized that adding berry to sugared lemonade instead of just honey lemonade made it less tart and bitter. That's the story I was told while sitting on my grandmother's porch drinking pink lemonade during a hot northwest Florida day.

Pink lemonade: there’s a version of this recipe that involves seeping sumac into water, the one you can find in North America and has these big red flower clusters. It contains an acidic compound (malic acid maybe?) and the red colour makes the drink pink. I tried making it once, it’s quite tasty and because it doesn’t have lemons it has a different mouthfeel because it’s not citric acid.

My great aunt made the best lemonade every summer and I asked her for the secret: “ A good pinch of salt.” “Pressing the zest” can also refer to muddling it. So she would zest the lemon and orange that she needed, add those fruits to the ”to be juiced” pile, muddle the zest with the sugar before adding the liquids. Yours has the same color as hers. If you try to add cherry juice or anything to make pink lemonade out of this recipe, it will turn even more orange. If you want pink lemonade, leave out the orange juice and zest, increase the lemon juice and sugar, and squeeze one fresh cherry into the mix. No cherry flavor, but a lovely pink color.

The lemonade for the sick thing actually makes sense: the water would help keep you hydrated, the sugar would be an easy source of energy for the body and the lemons would provide vitamin C which helps the immune system. Also, from Max's description, English pink lemonade is different to American pink lemonade; the versions I've had had cranberries and the like added which changes that flavour. I've also had rose lemonade which was pink but I don't think counts as pink lemonade if that makes sense.

I'm not sure if water with that amount of sugar in it actually hydrates your body. I'd imagine it would not differ much from soda and the body wants to get rid of it. If you added just a small amount of sugar, that would surely make a healthy drink.

More typically it would be raspberyy or strawberry being added but sometimes pink grapefruit is used. Very variable depending on brand but I'd be inclined to think that the raspberry would be most likely, seeing as how they grow wild easily and require significantly less cultivation.

Dear Max, the pink lemonade I know is usually made either by adding red grapefruit, or better yet hibiscus. I highly recommend the latter. Humans are pattern recognition machines and we recognize that that half ball looking hole would be perfectly filled by placing the half ball looking object in that particular orientation.
