My ultimate BLT can't happen till the 2nd or 3rd week in July when my tomatoes come on. If the tomatoes aren't good, neither is the sandwich. BTW that's the same time frame for sweetcorn here in Iowa. Talk about the ultimate paring.

The mustard is also the emulsifier, reducing the risk of the mayo breaking even with the egg.

I would add avocado slices.

For people that don't want to go through the trouble of making their own mayo, I can highly recommend mixing the pesto with creme fraiche instead.

Best bacon sandwich I had was at St John Bakery near Spitalfields Market London.. slices of back bacon between two well charred crispy but light sourdough bread and some bbq tomato sauce at the side.. so simple but so good
