I think the issue with aiming for the head but it not being a headshot is because of the distance. you probably had to aim above the target's head.

Sorry, I'm not saying this out of obligation, but the sharps rifle has a higher bullet drop than the Spitfire, I'm saying it from experience, but I can understand that you don't have it yet, unfortunately.
