Can you make a garbage BURGER?! Deep fried mac salad patty with a Sriracha bread coating. (Figure out how to turn it into powder. Maltodextrin maybe?) A burger patty with crispy cheese on one side and melted on the other. (Circle of shredded cheese straight on the flat top, no flip, place the burger patty on it and layer more cheese on top.) Take a large onion ring, fill it with chopped up hot dog or sausage, like a toad in the hole... Maybe mix the meat with egg as a binder...Fry that on the flat top so the meat gets crispy and seared.. (and hopefully stays together). Layer this on a shredded pork filled bottom bun and a grilled cheese top bun. Add your sauce and patties however with some pickles and fries on top. Sounds pretty delicious to me!

I absolutely love garbage plates. Whenever I tell people from other states about them, they always give me this "why would you eat that?" look. My go to is always cheeseburger with homefries and mac salad, with a copious amount of meat sauce. (Henrietta Hots' are pretty good. Schaller's has steak plates that are amazing. Never been to Dogtown.)

I am in Rochester for the first time right now spending time with my girlfriend. I am planning on going to Bill Gray's before I go home because of you two. It's really hilarious that you two came back here while I was visiting. My girlfriend taught me about Hot Plates like the first day I got here. I'll let you know how I enjoy bill Gray's soon.

Thanks for coming to our fair metro, visiting with a fan and enjoying a garbage plate. I wanted to share some history with you, as I am a Rochestarian and amateur historian. Zweigles was established by German sausage makers that set up shop in Rochester in 1880. @t. The Zweigles hot dog is not a frankfurter. It is a natural casing hot dog, often called a 'Texas Hot' here to distinguish it from the frankfurter. Many diners in Rochester were called xxx Texas Hots, like Marks Texas Hots still is today. In 1918 Nick Tahou set up shop and the original 'garbage plate' was a blue plate special of food to feed the factory workers of Rochester, NY, much like the famous Chicago Hot Dog. The Rochester Plate was a full meal and included beans, potatoes and two hot dogs (originally from Zweigles). FYI - The Rochester white hot dog (aka 'white hot') is a mix of pork, beef and veal, yes veal, in a natural casing. It has the flavor of a hot dog, with a hint of bacon and pork. The 'white hot' is best compared to a German Knackwurst. Zweigles also makes a great Knackwurst, and nothing tastes better off the grill IMO. (terrific for the southern specialty Sailor Sandwich). White hots, Red Hots and Knackwusts are available at @t. Nick Tahaou created his own 'hot sauce' to top the plate, that was thinner than chili, but thicker and milder than hot sauce. Kind of like Cincinnati 'Sky Line Chili.' Zweigles sells a version of it, but the Nick Tahaou recipe is a secret. Through time, mac salad and french fries became normal sides while hamburgers, cheeseburgers, Italian sausage and even fish became normal meat substitutes from the hot dogs. A modern garbage plate starts "with a base of any combination of home fries, macaroni salad, baked beans, or french fries topped by your choice of meats and dressed to your liking with spicy mustard, chopped onions, and our signature Nick Tahou's hot sauce. Each plate comes with two thick slices of fresh Italian bread and butter. The students of the University of Rochester and Rochester Institute of Technology would go to Nick Tahaou's and order the plate with 'all the garbage on it.' Somewhere in the late 1980's to early 1990's Nick Tahaou patented the term 'garbage plate'. The garbage plate was officially recognized. There is a still a charity event that commemorates this link that includes a run from the river campus, eating a garbage plate and a run back, by a U of R fraternity. Since then a number of garbage plate alternatives are found around the city in each town (sloppy plate/ trash plate/ messy plate). Many are very good, but Nick Tahou on West Main Street in an old downtown train station is still the original. Today a standard plate is 2 cheeseburgers, mac salad, home fries, onions and sauce. 2 hot dogs are a close second. Thanks again, I hope this helped 'fill in the gaps'
