Best Juicy Bacon Wrapped Pork Tenderloin done in less than 30 minutes!
Ingredients/Supplies:
Extra virgin olive oil
Favorite seasoning
approx 1 lb pork tenderloin
approx 8-10 slices of bacon
Solid pan
Oven probe
Parchment paper
Coat pork tenderloin in olive oil and favorite seasoning, then spiral bacon around the tenderloin starting with the larger side of the tenderloin - slightly overlapping and beginning new bacon slice where previous left off - you can use toothpicks to secure, if you'd like, but keep in mind, they will need to be removed before slicing and serving!
Lay bacon wrapped tenderloin on parchment paper, on solid pan and securely probe tenderloin - (if you choose not to probe - the tenderloin will be done at approx 28-30 minutes)
load into CSO on Level 2 - Convection Steam Mode at 400 degrees - Probe temp at 145 degrees.
* If using regular oven - follow same steps (425 degrees Oven for 25-30 min - until meat is registered at 145 degrees) and fill an oven safe bowl with water and place on the lower rack for added moisture while cooking.
When done, let rest for 10 minutes before slicing and serving - ENJOY!
